This week I tackled the basement. I had to build additional prepper pantry shelving units to add storage for hundreds of canning jars and supplies. At the same time, I built two shelving units for general storage and finally got the entire basement and workshop cleaned, sorted, labeled and organized. This was a big job but so glad to have it done!

Looks really good. Suggestion: Have you thought about making a root cellar inside the basement? Use a small air conditioner to lower the temperature but with a Cool Bot attached, so you can get it down to 40 degrees F; perfect for storing all the root crops, such as potatoes, squash, carrots, beets, etc, etc. Dump the air conditioner warm air into the rest of the basement to help keep the temperature in those spaces more comfortable.

I wish I had a basement. I am pretty much out of room for jars, filled or otherwise. Can wait to get the table finished for the Freeze dryer and dehydrators. The shelves and organization is amazing, you did a great job, and Jamie will be thrilled!!!

Long time watcher, first time poster: I just recently bought some mylar bags to start storing dried foods like in one of your old videos. I figure better late than never to start a pantry, might help ease some of my anxiety about all the droughts, floods and war across the globe affecting food supply. My only problem is we don't currently use a lot of beans etc in our diet, if you're up for it, I'd really appreciate a video or two of "meals from a prepper panty" showing the sorts of meals you guys make? Also maybe a question for "the dirt" if you make another one - health up-date (if you don't mind of course)? I remember at the start of the build Jeremy had slipped a disc in his back and Jamie had eye surgery, how are you both now?

I've always been sorta so-so about beans. I love chili and would buy canned beans for that, refried beans etc. But, we never did much with other beans other than a yearly navy bean ham soup or Busch's baked beans. Oddly now that I am canning - we are eating more beans. I never cared much for black beans - thought they didn't taste like much but home canned with garlic are amazing and now I find myself eating them all the time. I'm making homemade baked beans from scratch, finally found an excellent red beans & rice recipe and have that at least twice a month if not more. So, canning beans has made me more interested in eating beans and finding ways to use what I canned. Took me a while to figure out how to turn my jars of pinto's into good refried or bean dip that can compete with the store version, but now that I'm close it's time to can up another load. So, I'd recommend starting with a couple types you already know you will / can eat. Even if it's only beans for chili. When you eat out, check out how beans are used in the menu and see what appeals to your family then browse the internet until you find a recipe that satisfies your tastebuds. One of our favorites is a jar of the garlic black beans, add a can of corn, red onion, cilantro, either salsa or tomatoes and whatever else strikes your fancy like cumin or garlic, lemon or lime juice. makes a great small taco or chip dip or even just a salad side dish.

One of the requirements of the build we're doing is a set of shelves in the pantry set for the height of quart jars without wasting space. Having too many canning jars is a "sorry, not sorry" situation because we use them but they really are a massive PITA.

I have a dumb question. I have only started building things in the last year and I'm still trying to get the hang of the tools and the cuts and the drilling. What size screws are you using for this? My standard has been "As long as it doesn't poke out the other end" but there might be a more educated answer than this. :) Thank you.

That's actually a good rule. Long enough to go through both pieces and not poke out the other side hahahaha! These are 2.75" screws and they probably countersink about 1/8" leaving 1/8" of space on the other side to not poke through.

My storage is going to be pallet racks, not a big woodworking job, they are rated to hold 4,500 lbs per shelf I think so I'll have to try really hard to overload them. The shelves are wire so no wood and I'm going to try to eliminate all cardboard packaging to have no hiding places or bedding material for insects or rodents. Eventually I want to do some canning and store 5-6 months of food but it will mostly be for general storage.

Great job! I wish I had a large pantry space. I live in a nearly historic home (over 130 years old) and the only pantry is one under the stairs to the attic. I'm trying to figure out an economical way to expand into what I currently use as my seed starting room which does not have the heat and air to it. Long story short that room is just part of the wrap around front porch that was closed off with the original owner. So it butts up against the solid rock foundation thus making it expensive to run the venting to that section. Ugh. If you have any thoughts, let me know because I'll tell you I have jars coming out of ears and no real organization to them due to the lack of space. 🤣

@@Guildbrookfarm Good thing the results are worth it ;) I made the mistake of buying cheap flat pack drawers, wardrobe and dressing table a couple of weeks ago. Spent 3 hours that I'll never get back assembling a set of drawers that trembled with terror every time I walked past and literally none of the drawer runners would hold the drawer in. Whilst these were quite cheap items, they weren't so cheap that I'd have expected them to be so pathetically awful. And it wasn't my sad DIY skills at fault, I'm quite capable of assembling well made furniture - none of the holes for screws and things were in the right place, or were too big so they didn't hold panels firmly in place. Returned the whole lot for a refund and had to spend another 2 hours dissasembling :O

Now I've made the shelves I need to fill 'em! Now I've filled the shelves with jars i need to fill 'em! ........ And NOW my OCD is happy (until I start the baseboards)! Personally I suffer from a rare form of OCD. It's like regular OCD but I just have to mess things up! ;o)

We are new to canning and could definitely build something like these shelves in our basement. I’m concerned, however, about the humidity level. We run a dehumidifier 24/7, but I don’t know what percentage humidity is optimal/safe for our canned foods. It’s a finished basement, no windows; it has a musty smell right now so I moved the jars we have so far upstairs to our kitchen pantry. I know that’s a better environment but we would love to use our basement space if at all possible. Any input will be much appreciated.
