In this video, I will show you have to make a perfect egg roll wrapper. I have seen some extremely doughy egg roll. I couldn’t eat that. The recipe is simple but it takes a bit of patience to do it. If you do have access to it, you can buy it from the supermarket.

*INGREDIENTS*
- 12 ounces (340 grams) of all-purpose flour [通用面粉/中筋面粉]
- 7 ounces (198 grams) of hot water
- 1/2 tsp of salt
- oil

*Instructions for Egg Roll Sheets*
- First, dissolve 1/2 tsp of salt into 7 ounces of hot water. You want the water to be as hot as possible.
- Pour the water into 12 ounces of all-purpose flour in batches. At the same time, use chopsticks to stir it. By adding hot water you will denature the proteins. So when you fry the egg rolls, the skin will be delicately crispy (The opposite of doughy and chewy).
- Let it sit until the temperature cools down to a point that your hands can handle. Knead it into a dough. It is very soft so it should be easy to work with.
- Cover it with plastic film and let it sit for 30 minutes. 30 minutes later, knead it again for about 6 minutes until smooth.
- Cut it in half so the dough is not too big to work with. Then roll the half into a long even strip. Cut it into small even dough. Each of them weight about 0.7 ounces. Use a scale if needed.
- Sprinkle some flour so the small pieces of dough don’t stick to each other. Flatten them with your hand one by one. Cover the rest with a plastic film while you are working with 1 small piece of dough.
- Roll it like the way how you roll a dumpling wrapper. Once you get 2 pieces skin rolled *(try to make these 2 pieces into almost the same size)*, brush 1 piece with some oil. Any type of oil should work just fine here. Apply it evenly. Cover it with the other piece. Make sure they match each other.
- Roll them into thin wrappers. Do you best to get it as thin as possible because the thinner it is, the crispier you egg roll will be. If it is too thick, then your egg roll will be doughy. Feel free to sprinkle some flour to prevent sticky. Once you get the wrapper to about 9 inches across, cook it immediately. Do not make a lot and pail them together or else the wrappers will stick to each other.
- Turn the heat to medium. And place the wrappers in. It will just take about 20 seconds to see some big bubbles appear. Give it a flip. Let the other side cook for 10 seconds. Take it out and separate them slowly. Now you got 2 pieces of egg roll wrapper. Cover it with a slightly damp towel and continue doing the rest.
- Once you get enough egg roll wrappers. Trim off the edge and make them into the square shape so they can be the same size and the egg roll will turn out the same size too.
- These sheets are about 6.5 inches size. It is ok If you want to make them the bigger size. I like it to be smaller size is because I think 1 or 2 bite size egg rolls are perfect.
- Cover the sheets with a slightly damp towel so they don’t get dry and you can start making egg rolls!
- *How to save the egg roll sheets:* You can double or triple the recipe and make a lot at a time. Put them in a sealable bag and freeze it. Just defrost them whenever you want to use them again.

I was totally mesmerized by this video. I honestly didn't think you could make egg roll wrappers that thin at home without some kind of machine or device. Who would've thought that you could stick two of them together with oil, roll them out, cook them on a pan, and then peel them apart after into two perfectly thin wraps? I agree that it's a lot of work, but I love the satisfaction of knowing that I could totally make these at home myself. You are awesome, I love your videos!

Is the same method used by Indian cuisine to make their samosas in Goa and Mozambique. I learned with my mentor who was a Indian chef this old technique. Is amazing.

You may be thinking of filo dough wrappers. These are actually a bit thicker and depending on what you are using them for, a bit more chewy.

Nice recipe. But I have an addition to add to your egg roll wrappers. My father owned a Chinese restaurant years ago.....and they had the best egg rolls in Connecticut. His secret ingredient was peanut butter in with the dough. It really made the egg roll skins taste different and alot better.

I live in northern Italy and there is only one shop in our city that has them already made. But right now it is dangerous to go in that shop, so I will try this recipe. I appreciate it very much. I see that you live in Ecuador now, and you face the same food challenges I do here in a way. Italians do not make Chinese or any Asian food at home, so products are difficult to find. They don't make Mexican or any South American food, either. This is very sad to me, they are missing out. However, it is a challenge to us to find what we need, or learn how to make it. Your videos are valuable, don''t stop.

This is my son's iPad. I'm a granny from Texas. Oh my gosh, those are beautiful and perfect.they are like a little taste of Heaven. I got a chuckle at the end of the video when you were talking about the Peking Duck. Because I misunderstood you and thought you said Peking Dog. 😂 Being an American, it seems odd to me, even though I know it's a staple meat in some countries. My mother-in-law used to make the dough for these egg rolls wrappers, and the dough was so thin. It used to cover the whole table. I would like her recipe but at 99 years old, she does not remember it. I will try yours. Thank you for your very clear instructions!

I made eggroll wrappers last night. I couldn’t believe how simple it make these. I didn’t think I would be able to roll them so thin but I did came out perfect… next time I’m just going to make the chips to go with my egg roll in the bowl!

Lots of Work or not why would I ever buy in a store when I can make them myself. Besides now a days I never find what I want in the store. I make them with a thinner more fluid dough and make thin sheets like pancakes or "crepes". However I only fry the sheets very quick and not so high temperature so that they do not change colour. Maybe they do not get the same "crispyness" which motivates me to try your method. Awesome!

I am a new subscriber, and while I consider myself a decent home cook and am even capable of making decent hand-stretched noodles, I will never be confident enough to take on the egg roll wrapper. I’m very grateful to have learned the technique, though, and you very clearly explained a complicated process and did it expertly. Much respect for your talents.

Just roll out the sheets with a pasta machine. Use lowest setting to get them paper thin.What took 4 hours , now takes 15 minutes

I loved this video, it was detailed enough yet never boring and I can't wait to make them soon. I don't find good spring roll wrappers where I live and what I bought from the store some time ago were horrible. Hi :) So i moved to a small town that has hardly any good food. I have had to study and learn how to make everything my family likes lol I love crunchy noodles with my Chinese food. Our closest restaurant charges $1.00 for a tiny bag of crunchy noodles that are almost always stale. Absolutely ridiculous. So I came in search of egg roll wrapper recipe to make my noodles out of.. I made crunchy flat noodles. After the 30 minute resting period. I cut the dough in small sections. took one section out of the wrap and rolled it out enough to fit into my pasta machine. i rolled it from the largest setting to the smallest. the thinness was perfect for my noodles. I then cut them by hand into about 1/2 inch rectangles and fried them up in some avocado oil i had on hand. These were fantastic. Thank you so much for the recipe. Also I noticed that this dough is also the same exact dough i use to make my Polish perogies. Thought that was pretty neat. Thx again. You're a pleasure to learn from
