Peaches are in season and are the perfect high acid food to demonstrate how to process food with water bath canning. Hi Pam, I canned 4 qts of fresh peaches tonight. It almost midnight and I started at 7:00 pm. I kept playing your video on each step I took. I’m hoping this turns out because this is my first time ever canning. I’m hoping to hear that ping sound before I go to bed. Beautiful peaches, perfectly canned, easily done. Using canning lids to keep the jars off the bottom, sensible yet brilliant. Thanks for the knowing and sharing that water bath canning is a safe viable method when done properly! Appreciate you, Pamela!

Just found your channel and I'm watching your videos continuously. I canned when my kids were little but stopped several years ago and gave away all my stuff. But now, with current events, I've re-purchased canning books and equipment and am stocking up. Peaches were next on my list so great timing!

Hello Red Rose Pam & Jim, I just watched your video on Water-Bath Canning Peaches. Thank you. I am a pretty good and experienced canner. I’ve been doing it like you as a child. It was such a pleasure helping my Grans with it. Then helping me Mum, she had to have her Stewed Tomatoes always. It is something I hope to never forget. I just started canning Proteins back in October of 22. My brother lives with me and gave me some tips on doing this process. I am so excited to be able to work like this. I am disabled and in a wheelchair but don’t let it hold me back. Thanks to your videos and showing me so many techniques that I’m excited to do more. I’m not close to having a year of food in my pantry but it is such a joy to process the food, I saw a few videos on Making things like sauerkraut. I’ve never done any pickling or fermenting and I’m very excited to get started. Some people have called me crazy for spending money on food just to store in my extra bedroom especially because of where we live. And we live in an area in Washington state that is surrounded by military bases. I’ve been told that when World War III starts that it is going to start right here. Well, I’m just a type of person that won’t be giving up anytime soon and the only thing I may have to sacrifice will be Russian vodka because I make my vanilla with it. However, there are others around that I can get to make all the vanilla that I need! I’m sorry this is so drawn out, but you are so encouraging, even though I do know a considerable amount about Canning, and just learning how to prepare the meals in jars, I do not plan on stopping anytime soon. I am grateful that God has given me the ability to do the food preservation even while sitting in a wheelchair. I haven’t had to be on one very long, which is a blessing, but after another surgery, it looks like this may be the way things go at least for a while. I like to hear stories about when you were young girl, a few years back, ha ha me too and why do you do for preparing for emergencies. When I started Canning last year, I was frustrated by other people telling me that I’m crazy for doing all that work. But it wasn’t work for me, it was more like playtime. I am so happy that I listen to myself and not them, because after having surgery, and not being able to prepare and cook food, very easily, I had lots and lots of choices. I had lots and lots of food that I already prepared. So far, none of my friends have come by to offer help or bring a meal to assist me. I know that I can only count on myself and God of course. My heavenly father watches over me and guides me, and sometimes doesn’t make a decision that someone else wouldn’t agree with, but I would rather listen to him than to the friends who can’t make enough time, just drop by and see if there’s anything I need. I know that God will provide for me. Today, May 20, 2023 is the 10th anniversary of my husband passing away. I didn’t know at that time how I was going to make ends meet. But I turned my life back to God and even though things have been pretty rough at times, he is with me and I can feel him in my heart and my mind and soul! I am only here on this earth because this is where he wants me for now. And if I don’t get to eat half of the food that I have prepared because he takes me before I can eat it all, well, there’s always someone that needs some good home cooking food. I love to give it away whether they need it or not. I have always found so much joy In sharing whatever I have. I know that God will provide for me and if I am able to bless people with a good beef stew or a jar of canned chicken breast with sweet-and-sour sauce, then I feel happy and satisfied that I am doing Jesus his work. Again, I’m sorry this is so long, but I feel that you are a friend and would not leave me hanging like my other close friends have done. So I will pray for you and Jim, that you will be able to continue your preservation projects, and that you will stay safe and trust that God will be with you in case of any events that may occur. I started preparing for the approaching food shortage in April 2022. I decided that I was going to teach myself to can. I had never canned anything before and I knew I was going to have a steep learning curve. I watched many different knowledgeable preppers on RU-vid, but for me, your channel stood out because I am the kind of person that needs to know the why so that I can properly implement the how. I tried canning peaches for the first time last weekend (exactly as you did in the video). I got 7 quarts of peaches sliced in half. The peaches were floating-approximately 2 inches of syrup was at the bottom of the jar. I canned peaches again this weekend (8-20-22) and this time, I quartered the peaches. I really packed the peached in the jars without crushing them (or so I thought), but the peaches were still floating, just not as much as last time. On both batches, I got no siphoning or buckled lids. I consider this two successes. I opened a can from the first batch. . . and they were delightful! I am currently working my way through your water bath canning course and I as of the writing of this message I have completed 67% of the course. You have been a great inspiration to me-thank you for all that you do!

I canned 8pts this year… so far! I guess that’s my favorite canned fruit. It stems from my childhood staying w/my granny & papaw on their farm in rural Ky. You’re probably going to think this is weird… I like mine just a little bit dark. She used to fix me peaches & cream in the winter time for an afternoon snack. It was my fav!! So glad you did this. Thanks for another great video. So glad things are picking up in your channel too. People are seeing what a remarkable person & teacher you are! Keep up the fantastic work! ❤️🌹

Clever using the canning rings, Pam. I've seen people panic not having a rack for the pot. Nice looking peaches. All I need to do now is to tell my peach trees to give me lots of fruit this season LOL Great video. Thank you for sharing.

I am so glad I found your channel I have done jams in the pass but now I’m retired and will be planting a winter garden I want to can as much as I can. Not just for me and my family but for my parents and aunt that are up in age. I want to start eating better and there is no other was than to grow it yourself

Thank you, Pam, you + your meticulous videos are a blessing! I have 4 quarts in the pot boiling and realized that I didn't leave 1/2 inch @the top. Not sure what will happen - nothing has exploded after 30 min @sea level...They seem ok, out on the counter cooling and the lids have popped.

@@RoseRedHomestead love your videos. Just pressure canned diced tomatoes without water in jars in my Presto. Electric.. Added fresh basil leaves from my garden to the jars with lemon juice and a quarter teaspoon of sea salt to pint jars...just took them out. Mishap, only one jar, bottom broke off, i forgot to put it back in pot after filling...must have cooled to fast...sigh. But rest are great. Very pretty.

Great video. Love the idea of the rings in the bottom of the pot. I will start canning my garden harvest in a few days. We are in upstate NY. So our season starts later than most. Very excited to get it done.

Lid rings for a rack! Soooo smart. I have a small granite stock pot but no rack small enough to fit. The rings will work beautifully!

Hi guys. I just love love this video. I don't have any idea why I didn't pay more attention to videos on water bathing. It's not intimidating at all. Oh my gee me with pressure canning I had everything I needed and was so afraid to do it. I'm over that. Nah. I still get concerned if I did it right. I think I doubt myself unreasonably.! Pam, you and Jim are such a Godsend to your fans! I remember canning with my grandmother and mother, too, in the summers back in El Paso, TX. The kitchen would get so hot! We canned peaches, apricots, plums, figs and pomegranates in all forms and fashions from spiced peaches to fig preserves and everything in between. So glad this video is still here. I was out grabbing fruits yesterday and picked a giant box of peaches like that from a neighbours yard. I traded him some rabbits and grouse for peaches 😁 Came home and was like oh geeze this is a lot of peaches haha I need Rose lol!

I am glad this gave you new ideas. It is best to stick with pint or quart jars for most things. Jelly jars are 8 oz, and are good for jams and jellies. It is not recommended to use jars larger than quart for water bath or pressure canning.

Peaches coming in now in NC. Planning on doing some canning and this video was not bad timing. Glad to hear I can water bath those. It was pushing 95+ today and I do not want to heat my house up pressure canning. That's why I do all my meat and low acid foods in the winter time.

Another perfectly timed message! I've heard the skins can be dehydrated and powdered. Peaches were $0.50/# so I'll put up some half pints (single household) and dehydrate some. So appreciate the information you share!!

I’ve water bath canned for years but I now have the Roots and Branches steam/water bath canner. Steaming is so much easier and that canner has a gage to help with when to start canning time. These peaches look amazing. Thank you.
