Suggestion: load the peaches with the pit hole on the top. If you load them face down, then air gets trapped in the pocket. Alternately, after you install the lid, turn the jar onto it's side, rotate and stand back up, this will allow the trapped air out of the pocket. You might need to add more juice/water before putting them in the canner.

I just came across your video and thought it was perfect. It’s the first time I heard you could use grape juice as the substitute for using sugar, I think that’s a wonderful idea.

Great alternative. I've been searching for one. I would imagine it can be as a replacement inall manner of canning, chutneys etc.

Thank you. My peach tree is LOADED with peaches this year. I actually think I can do this. I may have to slice my peaches because I don't remember if they are free stone or not. Just that last year they were DELICIOUS.

While grape juice is a great idea, it would add a lot of cost as I would only use organic juice. I have always used a very low sugar syrup - using a sweetened syrup helps preserve the sweetness of the fruit. (I get organic cane sugar in bulk from Azure) I'm going to experiment with some other low-carb sweeteners. 🍑

It does add some cost if you have to purchase it, but I haven't found it to be significant enough of an expense to worry about. Our ultimate goal is to process our own grape juice and not have to purchase it all.

You are absolutely fabulous. What stores do you do your grocery shopping at? Do you stock up on water? Can you possibly do some in store grocery shopping videos? It would be awesome if you could show how you do your full shopping

Sorry I’m just now responding! I actually don’t shop in stores except for a few basics that we are not currently producing ourselves (milk mostly). I buy almost everything we don’t produce from Azure. Some things come from other online sources.

1 year without loss of appearance/texture. After that it starts to deteriorate, but still safe to eat. Light won’t do anything other than affect that color/appearance faster.

What is the difference when canning without sugar? I've never added sugar when freezing, but was going to try canning this year and react to processed sugar. I'm seeing various extension offices saying you don't need sugar to can unless it is jams and jellies?

Sugar is added both to increase sweetness and preserve color when canning fruit. The grape juice is naturally high in sugar and accomplishes both. You could also just do water, but you would definitely notice a difference in taste and color. Jams and jellies only require sugar in order to gel with most types of pectin. I use Pomona’s pectin which does not require any sugar. However, I still use natural sweeteners for taste.

Oh, I’ll get that fixed! No, I wouldn’t recommend an IP. You could use any large pot that is stove top safe though. You just need something for your jars to sit on off the bottom. A layer of jar rings works in a pinch! Also it should be tall enough so that the water can boil a few inches above the tops of the jars.

Sometimes yes, but I buy some too. I just make sure it is organic and doesn’t include other ingredients.

@@TheFromScratchFarmhouse very hard to find citric acid is a chemical made from mold it's in everything so called organic you can steam the fruit in a double boiler method no sugars no waste

Hi Sandra, welcome here! Yes, you can use the white grape juice in place of syrup when water bath canning any fruit. Just make sure you follow the canning directions for that particular fruit, such as how long it should be processed. Also, you can use other types of juice if that works better flavor-wise with that fruit. Happy canning!

My peaches rose above the liquid should I open them and add more and recan? Or will they bee okay?

Nope, they might brown a bit where they are sticking out of the liquid, but that won't hurt them any. This is very normal.

I read into things too much. When you’re adding the peaches to the big pan is that just water in the bottom or is that some grape juice? And then your sprinkling the fresh powder over top.

Great video! First time ever canning. How do you know if you did it right? My peaches float, I lost some liquid and there are some bubbles in the jar, but they are sealed. How do I know if they are safe?

I'm sorry that I'm just now seeing this! I'm sure you already decided if they were safe to eat, but I'll mention it here anyway. As long as it was processed long enough to kill off any bacteria inside, and the lid is sealed, it is safe. Even if you didn't process it long enough, it could not contain botulism, which is what most people worry about, because peaches are a high acid food. Hope this helps!

Would love to get an answer. Also white grape juice has 37-40 gm of sugar in 6 oz of juice, so this is certainly not a "low sugar" alternative

Exactly what I was hoping for here. In the ball book they mention using water… I would really like to find someone who cans peaches in water/their own juice.

You definitely can, but keep in mind that it’s less about sweetening the peaches and more about keeping the sugar and peach taste in the peaches. Water is definitely fine, but will dilute the taste.

I just used your video and was very informative and easy to follow! My first time canning peaches!! I’m hoping they all seal well! I use taddler lids and regular ball lids. I was a little overwhelmed with how many peaches I had to peel/cut and core but I did 9 quarts and 1 pint. I felt like a savage trying to get those peaches apart! they were like brand new and hard! I even broke a knife. Maybe I didn’t understand on how to exactly cut them in half and still get the core out easily. Do you scrape the red pieces of core out of the middle? If I didn’t, is it easier to get it off when you take it out of the can?
