INCREDIBLE omg that blueberry at the end holy shit!! Damn suehiro is str8 killllin it!! I own their Rika 5k (part of the same series as this 8k) and they edge I get from that and how quickly blows me away every time, I’m realllly considering to pick up some of the others in the series. Also would love to see you guys test out some Shapton Glass stones! Really love that series and it’s performance too, they are surprisingly durable despite their thickness and I personally love the feedback and the speed to which they work. I haven’t tried any Nano Hones (yet…!) considering picking up one of their lapping plates, either the low grit NL4 or the higher NL5, looks like you guys got the NL8 or NL10 which one day will definitely get, just might be a bit! Looks like an incredibly badass tool that is engineered to work on anything and fast, def great to have for your tests you guys do! Love the content, definitely dig your guys’ style and also love the banter back and forth (wouldn’t mind even more of it! It’s hilarious and authentic) I am surprised there aren’t more views on this channel tbh, it’s definitely great and your whetstone battle series is epic. Keep making this great content and more will come! Oh and fantastic sharpening technique btw! Seriously very very good and a pleasure to watch. I remember watching some of your earlier videos and while you still had great technique, it looks now even more smooth and consistent and just into the flow of it much quicker rate. I'm glad to know that we are coming through authentic. We've gotten used to doing the videos over the last two years. I appreciate everyone of your individual comments. Hopefully we have helped and we're trying to get better ourselves. I do not personally have the. Rika Stones but everyone's told me I've gotta grab them. So we're gonna look into it.

@@nadm btw, I see that people are saying you didn’t spend time on the 5k to jump on the 8k because of the slurry, I personally own both stones and I feel that’s a normal slurry on both, so don’t get bothered by those comments, I’m not a knife guy (but I do sharpen knives as well) and I don’t consider myself a professional sharpener but I do sharpen as a business and trust me that I’ve sharpened allot of tool steel with great results so I might have an idea of what I’m talking about. Keep up the good work brother.

I come to this video again from time to time. Thanks for all hard work for us. Great content as always. Curious about suehiro white (wa) 8k vs green (gc) 8k. Probably green is a little more aggressive as green carbide is harder than white aluminum. And probably therefore even toothier than suehiro white 8k. But probably white aluminum will give a finer teeth. But both should be much toothier than other polishing type brands like naniwa shapton etc. I thought as a Suehiro fan you would like the idea. On suehiro I have at most 5k but I will try white or green 8k soon. Have a great day

@nadm I will try both green and white 8k soon. Also trying some jnat finishes atm (nakayama & tsushima nagura brick size). Thanks for your replies. Thanks to your videos I gave clean strop another try and it made a huge difference compared to stone finish, yet it didn't remove the teeth that I was sick of before (losing the slicing aggression due to losing teeth after loaded strop). Turns out that was only a problem with chromium oxide loaded strop.

I have a couple of 10,000s. I'm not sure if I have that one in 10,000. I'm going to be doing a video on them but my issue is that I don't really need to go that high ever. I would be interested in seeing how much more sharpness I can get out of them. It seems a bit overkill but we're going to check it out. The higher grit stones are not cheap.I know I have the nanohone and the Shapton glass in 10,000

So if you check out our Whetstone wars playlist then you will see we did a 3000 and that was a very obvious winner. I like more stones for more progression. Obviously, we were able to do this with a 1000, 5000, 8000. The results were phenomenal. I do believe in more stones in between, so probably the 3000.

Why is Naniwa's Snow White so legendary? I heard they had to bring it back due to feedback from their users when they retired the stone. Btw curious about the measures for Americans: do you people know your metrics in some fashion or do you just get used to specific profession/hobby measures? Similar to how I'd never refer to a guitar scale length as 648 mm or something ridiculous, I'd just say 25,5" even though my understanding of imperial measures is really poor, just common object lengths. As an European I convert millimetres usually to centimetres in my head since you know, they're so small, but I do have an idea of how much an individual millimetre is. So when you say 200 mm long, I think "20 cm". Well obviously as a mechanical engineer I tend to express measures in millimetres, that's just sort of profession related context thing, I don't think of them the same way as I do in everyday life.

The Naniwa 8K is not a splash-and-go stone, and neither is the Suehiro, which Suehiro are you using the W series or the G series? the W series is better for carbon steel knives such as many high-end Japanese Chef knives.

@@nadm dont buy the 5k chosera/professional it gets cracks and crazes. Many higher grit naniwa are prone too it my 3k doesnt my 5k is and i flatten it everytime i use it also.

​@@knifesharpeningnorwayCracks depend on the user.. I have entire line of Chosera +Snow White and non of my stones cracked.. I saw many ppl submerge it in the water , thats when they crack but it also depend on other factors like temperature flactuations and mineral content of the water (I know thats hard to control) But i really take good care of them, using distilled water and temperature where i live now is all year around almost same avarage 25°C (30 day time 17at night) Btw even stones that had hairline cracks didnt affect the stone performance.. There is reason why Choseras are legendary😉

How come you didn't use the edge on up to help decide. I honestly think the first knife cut the blueberry with less resistance but the second knife cut more slices and at its price point makes it the winner

@nadm I completely understand it would have been interesting just to have a comparison of the knives before you used the snow white as a baseline and after just to see if one would refine the edge more compared to the other. In all honesty, the results you achieved with both stones are amazing and I've learned so much about knives and how to achieve a sharp edge from your videos. In my eyes in some ways, your opinion is worth more then a another comparison data point . I have started to use a digital coin inspection microscope just to see how the bur and finished edge looks when using different processes and its truly amazing to look at a edge that's been finished with stones compared to a edge thats been finished with a strop it was the best 70 dollars I've spent and has added a whole new level to the rabbit hole of sharpening knives its just very interesting to watch the results of each step under a microscope

Naniwa Snow White is well known for proneness to cracking and this is huge red flag. Suehiro W-8 is simply better choice. Slightly better results than Naniwa are cherry on top. Thanks for awesome video.

Thank you for that. I've been doing it since you guys have been telling me to do it. I need to apologize for taking so long. I've had a surgery on my knee and some other things going on. We've had the court case for my car accident. We had to deal with that as well. We've also had some other major things happening personally. Deaths in the family and lots of arrangements to be made. Also, I'll let you know that I will be having another major surgery in June and will not be making it to the Blade show. I will be out of work for two weeks because I'm having all the extra skin cut off of my body. We do apologize for an interruption of videos if it were to happen. My first thought: this is interesting. My immediate second thought: I hope the well known Naniwa Snow White proves extremely crappy and I'll avoid the temptation to get one. I still have under 100 whetstones from different (often complete) series from various manufacturers, and I'd hate to spend some for any more stones. :D Doh! I just realized from the intro it is a white Suehiro that I don't have (I have the green 8k Suehiro soaker only). I tend to love Suehiro s&g's even if I tend to find them semisoakers. This can give another expensive idea too, whichever proves to be phenomenal! ..and they say youtube is cheap because it's free! :D Beware of making too solid impression with single flattening. Mostly they are just fine but I have a couple brands that take several flattenings to get what it really is. Some of my Imanishis are like that and one artisan brand I hated after couple flattening sessions and rated best of my stones after about 8-10 heavy flattening sessions. Still, flattened is much better than sharpening out of the box like some do.

@@nadm The green one is quite similar to Ouka 3, Rika 5k. It is the 8k version of those, acts and feels like an 8k version of Ouka/Rika. Same "grabby" feeling, same kind of softness and all. It's a good one but not stellar. I tend to prefer my other 8k stones. But if one wants an Ouka/Rika style 8k, that is the one.

I've read that synthetic stones perform different at the start because some are fired and that leaves a glassy finish on the exterior layer. So the stone's real character comes out after a few sharpening sessions.

@@jiahaotan696 That's exactly my experience. With thick "skin" you may need several flattening session to get the real character out of some. So are probably ground in the factory and with out of the box. Most are somewhere in between these extremes.

I’m sorry you didn’t watch the earlier part of the video. We explain in the first five minutes of the video that the two knives sharpened on a 1000 gritstone and then a 5000 grit stone and then left with the burr ready to go to the next stones. Both of them or sharpened on the same stones up to this point of the video and then they were sharpened on each of their individual 8000 gravestones. We explain it really good at the first part of the video.

@@bozoedge hey brother, I appreciate you. We definitely spent a lot of time on the 5K. As evident by the series of passes you saw. Maybe we could’ve used a different 5K. That’s up for another discussion. We did a long series of Edge, trailing strokes, and then we did another series of edge leading strokes. Let’s not discount be cutting ability of these two stones, the 8ks. I am not one to do bird removal after every stone. Some people do but I disapproved that theory in a different video. They are definitely some other 5K stones. That may be would’ve done a better job. The Bob Kramer stone is made by Naniwa. It is the older version of their stones. I did put quality time in on that stone. I am very happy with the end result. Once again, I do appreciate your comments and observations. You made me contemplate what I did, and I re-watched it and so I put plenty of time in on the 5K.

It was definitely a while ago. I've lost more than 100 pounds and it turned out that I was on some medicine. I had some bad side effects. The medicine has been prescribed over the counter for a long time and once I found out the new warnings I got off of it. We have had much better luck.

Hello, The Suehiro is impressive on a 1,5k Progression. When You Commenced your Tests on both knives, I think The Toothy edge theory Is Correct. If I am not mistaken Naniwa 1000k is best used when a Naniwa 600 Whetstone is used Prior or before. In my own experience I Used a Lower Grit from King and Achieved a Superior Sharpness. There is a description on Amazon where Naniwa Specifically States What I wrote in this comment; and I have also seen another Sharpener use the Naniwa recommendation as well. So If You want You could try that and See if Naniwa can be on Par or Superior to Suehiro. I think Naniwa will win on the tests if their Specs are Followed Correctly. But what Suehiro did during the Tests is very Impressive.

So I really do think the type of edge you need is different for the purpose. We're gonna be doing a series on that. What type of badge for what type of knife! I think if you're dealing with fish than you want something very fine because you don't want the edges to be feathered.

Hello, hope all is well. I Confirm that the Suehiro leaves a hazy finish on Stainless Steel. I was Sharpening a Cleaver; a lower end model on a 1k - 3k and 6k Suehiro Shiramine; and my Result was Dull, in fact I could run my finger up and down the blade without Worrying about getting cut, The Blade is made of inox and the factory angle is 25 Degrees for whatever reason. I tried this using their dressing Stone as well. Next time I am going to try using a Suehiro 5k dressing or Nagura Stone to see what happens. My Presumption is that these Stones are specifically made for Carbon Steel but I guess we’ll see what happens.

The higher grit naniwas like for example the 5k choosera/profesionall and the 8k you show here they are prone to crazing/cracking even with flattening everytime so i personally would stay away from them.

I always have really liked the snow white 8k stone, always been all about Naniwa stones mostly they have never let me down. Green brick 2k is only one I despise. I also really like the Naniwa Fuji 8K it is a little better than the snow white is I feel. I mostly use snow white for knives and Fuji for a set up stone for 12K super stone for my straight razors i use on my face.
