I went to Thailand a year ago and was told not to eat the seeds of jackfruit as they are bad for you. I read online that boiling or roasting makes them edible. I wonder if the canning process renders them edible?

My jackfruit always comes out rubbery and tough. Am I not cooking it long enough?
