I use to have biriyani in lunch everyday for 3 yrs, but every 3 months or so i had to take a break for 2-3 days. Sometimes even the most awesome thing can be too much, but i agree we can have it atleast 300 days every yr.

I'm a professional chef in England. Say what you like about the hygiene, but this is PROPER cooking, proper teamwork. I'd love to work in a kitchen like this - I'd have so much to learn from these guys. The obvious pride they take in their work - no corner cutting (the saffron, for example). I probably wouldn't last 5 minutes in their kitchen but hey-ho; I'd probably learn more in half an hour than I have in the past 5years. A fantastic post, informative and insightful. 👍

I went to a Hindu wedding reception recently and the meal was wonderful. They carried the food through in the big cauldrons . So much work goes into this. Thanks for showing it in detail. We still use your keema recipe regularly 😊

This is amazing.. to see how different cultures cook blows me away but to see what I term BATCH COOKING and making it taste perfect is superb.. to get all spices and powders and gara masalas 100% correct is …. I’m lost for words.. love from Doncaster England..

See how thoroughly they're washing the meats? This is actually normal. In the west it's quite normal for us to go to even a top restaurant and for them not to wash the meat.

Salam Latif, as a South Asian food connoisseur, i thoroughly enjoyed this vlog. You went somewhere where you can experience the Dhaka biryani at its peak, a private function which does not cut corners and usually a little better than commercial/restaurant biryani. As a small correction, i'd say you wouldn't find this biryani in Hyderabad (India) or Pakistan. The chefs there might've told you so, but that is not correct. Hyderabadi biryani for example uses a lot of fresh coriander and mint, and powdered spices and red chilli powder add excessive heat and colour. Hyderabadi biryani is also technically kachi biryani though. In Pakistan, most biryani is pakki (not kachi) style and excessively spicy often with tomato added. Dhaka's original name is Jahangirnagar and Dhaka was a Mughal capital, which means it has had diverse influences, similar to other Mughal cities like Hyderabad, Lahore, Dilli, etc. Dhaka's biryani is unique of its own, and very importantly, it's the closest to old biryani recipes anywhere in the subcontinent, emphasizing sweetness, fattiness and fragrance. One unauthentic element is the potato. Potato addition started in Bengal during British rule and spread to today's Pakistan when it was West Pakistan. As a result, Bangladeshi and Pakistani biryanis are the only ones with potato (besides just the Indian city of Calcutta in West Bengal). The closest biryani to the Dhaka kachi you can find in South Asia is in Lucknow, India.

Brilliant insight. As you say, cooking exactly like this in London, in a big unit with an open kitchen would be awesome. I think the traditional Bangladeshi Indian restaurants need a makeover and this style is the one. I have a railway arch in Leyton that would be perfect 😂

You could setup a pub up there for the Brits, (probably more popular with the Scots though), 8 cans of Tennent's, couple of servings of biryani or a curry, absolute bliss. I'm thinking they'd take a dim view of folk drinking, not sure?

7:14 How will you bring them over for food preparation (work permit) in the UK, when they have no clue of British standards of hygiene for cooking and health & safety rules? They probably have never seen a professional kitchen even. They will have to learn all the basics first, get a certificate and then bring them over. Otherwise it will be food poisoning and lawsuits.

only ignorant westerners question the cooking conditions, every one else in the real world understands :) and more westerners than you probably think understand and are tied to the chair watching the glorious effort by genuine hard working people . . .you should address the place of women in that culture and the industries too, the whole of the cultural experience and condition. thank you for sharing and becareful in pakistan it's a beautiful place with wonderful people that has more than its fair share of evil roaming around perpetrating treachery.
