AD | Beat the Chef is BACK. And this time Baz is taking on Chef Ebbers in a Mystery Box Challenge that celebrates the humble rice grain.
To swot up on their rice knowledge, we sent them both to learn from a rice farmer and rice breeder in Italy. BASF’s agriculture experts helped to explain just how much work grows into creating the grain we so often take for granted! So, whose dish will best celebrate everything they learnt in the paddy fields? Who will take the win on this occasion…?

@@LilianaKalithey made a joke earlier how risotto is always a date meal and Ben makes it when he has a dinner date, and so Barry is saying his personality must be terrible whilst his risotto is great meaning that although he can make a great meal, his personality can’t find him a gf etc

I think that if they left then on the bone it would be a bit novelty. But well cooked frogs legs are delicious and added to thar dish was smart. The way Ebbers treated the ingredients is what takes it out of the novelty.

In South Louisiana many farmers rotate rice and crawfish in their paddies. It creates an environment that benefits the year round process.

I feel like Barry should have won due to the fact that his dish brought rice to a new place for them and did it well, whereas Ebbers' dish was a seasonal rissotto with frog and a rice cracker. Don't get me wrong Ebbers did make it well, but the fact remains he literally played it safe and didn't really take a risk.

A "shocking personality" to the wonderings of why Ben is still single is the nicest way I've heard that said. This is the second time you lot have educated me on rice. I was still mulling over why long grain is so popular here and where it came from.

The Po area is experiencing extreme drought this year, water for households is already being rationed in some areas, with no rain in sight. I really question how practical it is to use the alpine water to flood rice paddies. But the rice farmer is right when she's talking about climate change being a huge reason for it.

I live In a rice farming town and in the summers they hire highschool kids to walk the fields and pick the bad rice so the machines can harvest the good rice made decent money but it's hard hard work knee high to waist high water full if all those Texas critters and snakes and hogs

Ben's Risotto looks yummy and I'd love to try it, except the frogs. I don't care how sophisticated or chefy it may be, I'm not putting a dead frog in my mouth 🤢. I'm wondering how Barry's rice cakes didn't taste eggy with so much of it in there.

Incredible video. Iam latino and rice is a part of every single dish I eat. Regarding the winner I differ from the judges. I believe Baz won. He used rice in ways I wouldnt nirnally think of using rice and for me that makes him the winner

Am I remembering wrong or did they use to do videos where they had to draw cuisines and a meal (starter, main, dessert) and then had to create a dish? Would love for them to do that (again?). I would also love for them to focus on individual cuisines more (maybe a new set of badges? - can they "master" Italian, Indian, Greek etc.) I feel there are a lot of cuisines they had yet to explore - like the Nordic cuisines which has produced the best restaurant in the world. Maybe go to Norma and see just how far you can push the boundaries of cooking - Ben would/should get inspiration - the Normals might just be in awe.

Several states here in the US grows rice. Texas, Louisiana, Arkansas, Alabama, California, South Carolina and several northern states have a grain called wild rice. Barry had way to much alcohol in it. No way could I have it.

This is the second video that I've seen today about rice in Italy. A variety of rices are grown in Italy with all kinds of recipes from North to South. Barry was robbed. While I would eat the risotto with or without the frog, I would have prefered it without. But I really didn't see any real creativity. Barry showed more creativity. I honestly would have liked his better because of that. & no doubt the taste.

When they started talking to the rice farmer and showed here day I though it said Smith, then I when back and looked again and saw it was not. The reason I noticed this was my family name come from that part of Italy. I am an American, and if my Grate Grandfather has came here much earlier out name woudl have been changed to Smith, because it means blacksmith and my family crest is the hammer and anvil (according to my father). I though for a second they changed her last name to smith.

I saw a really interesting video "Louisiana Crawfish and Rice Farm .." where they used crawfish to control pests in the rice fields and harvested the crawfish every other year. Essentially getting two crops out of one field and saving on pesticides.

When Ebbers goes all out its always an amazing Dish. That Puree alone makes my mouth water with that Vibrant Colour and the Flavours jammed into it. Also mad respect for going Italian to celebrate rice! 99% of people would immediatly go to China, Japan or India thinking about rice

@@dm9929 I've been thinking a lot about this. In Western countries, we tend to have a very small window of what I call the "cuteness factor". If an animal is too gross (bugs, frogs, snakes), it's not traditionally viewed as food from a Western perspective. But the same goes for the other end - if it's too cute, it's also not viewed as food. Not a judgement, just an observation.

I work in crop modeling research (using computer programs to simulate crop growth, development, and environmental impacts under different environmental conditions and management practices). One of the goals of my field is to figure out which traits are needed under future climate conditions, so that breeders can get working on creating those new cultivars now. The 6-8 year timeframe mentioned in this video is actually pretty fast turnover for a new variety. Depending on the species and the breeding techniques used, you could easily be looking at a 10+ year breeding cycle. It's the reason why the biggest form of industrial espionage in the ag industry is seed theft.

Sadly, Melissa was 100% correct, the po' vally hasn't seen a drop of rain, so not only they don't have water, but the water from the venice lagoon is going upriver and destroying the eastern fields, and the alps are giving less and less water downstream!

Idea: Stop a few random shoppers, ask each one to nominate one item from their own shopping bag, then cook a meal from those. Alternate idea: Get kids (Jamie's maybe) to pick ingredients (perhaps from specific categories, so it's not all cakes and candy). Alternate alternate idea: Blindfold Barry and send him shopping at a market. All he can say is "I'll take one of those, please."

When Ben said "i want it to smell like the taste of rice" I knew exactly what he was saying! I drink a lot of genmaicha tea and you get that amazing nutty smell that tastes like rice, and now I want the boys to do some tea pairings! Can we make it happen?

Melissa is amazing! She is so smart and thoughtful. I know it is not everyone's cup of tea, but I adore learning how different food industries around the globe are adapting and researching to get the most out of very little. This is something we will all have to do in the coming decades - or at least you all will, as my time is maybe a decade left.

I fully disagree with the winner. Ben ABSOLUTELY nailed his risotto and did something I would eat boat loads of. But Baz tried to recreate a thing he tried in a restaurant to celebrate the ingredient in a local way AND HE ALSO NAILED IT. So just for the difficulty alone, Baz should've won this and is my personal winner

Ben, I love your devotion to your garden allotment! As a fellow gardener who loves using my homegrown produce in my cooking (albeit not as well as you do!) I would love to see a video about your garden, or a challenge where you have to make a meal using only stuff you’ve grown and a few pantry staples!

Ben's dish looks so vibrant and inviting, if you order that in a restaurant, you know you'll get your money's worth. While Barry's dessert will immediately intrigues you if someone introduced it as their special seasonal dessert of the day and I would definitely want to give it a try too. Who wouldn't be curious with Rice Ice Cream....

Ebbers makes a risotto with stuff from his allotment. Barry makes something sweet out of a traditionally savory ingredient and overcomplicates it. ...yes, all is right with the world. At least for this 20 minutes.

To be fair to Barry, sweet rice puddings, sweet rice porridge and sweet rice cakes are very traditional in many countries (including my own, def had more sweet rice dishes than savoury growing up as sweet rice porridges and puddings are a huge staple from where I'm from) but maybe sweet rice dishes are more uncommon in the UK?

My vote for winner goes to Barry. The risotto looks amazing, but with the exception of the twille, all of Ben's innovation came from what he added to the rice. No matter how special it was, it was just a vehicle. Barry did a much better job of celebrating the rice, and doing more with it. I mean, I've hqd lots of different rice crackers, but I've never has a rice ice cream.

Even if Ben’s dish is better, I feel that Barry’s is the better celebration of rice or at least the most creative. Maybe I’m wrong though, perhaps less is more

Great video, guys, but please be honest with your titles: this was in no way, shape, or form a "mystery box" challenge. They knew exactly what they were going to find inside and clearly had planned ahead, as evidenced by Ebbers's allotment box and Barry's specialty wine. Call it a normal vs. chef rice battle if you will, but don't call it a mystery box.

No way!!!!! I've never seen Mirto, rice cooked in a cake, and the other elements!!!! It TOTALLY should be Baz. You even gave Ben stick for making risotto throughout the whole video as a "go-to" but Baz did something where we all learn about new ingredients (Mirto) and new ways to use a VERY familiar ingredient. Mike said his wife is sick of risotto now. Nope. Wrong decision.

Isn't though most of the frog legs imported from outside the EU? Which is quite problematic because of the often cruel conditions under which the frogs are held in most Non-EU countries producing?

Ben was very close to making a Vietnamese dish called Bánh ướt with his rice tuille. It’s one of my childhood favorites that my mom made all the time growing up!

Honestly, I think Barry was robbed. I would have chosen Ben's dish every time, but Barry nailed the brief better, and did something that was amazing, completely unexpected, and new.

The rice cake is very interesting and something I will be trying to recreate. Sometimes, I find these contest can't have a winner because both dishes are so unique and celebrate the food item.

Very appropriate to not only promote Italian rice in the middle of the worst drought, Italy has EVER suffered from, but to also promote a chemical company, that is massively responsible for over fertilization, species decline, mono cultures etc. etc. etc... Proudayou guys!

I am usually a big fan of this channel, but I had to stop watching this video during the part in Italy. It feels like Sorted and the farmer Melissa have been utilized by BASF to promote their agenda of greenwashing pesticides. Let's not forget that BASF is one of the biggest chemical companies in the world and as such responsible for huge amounts of emissions. Additionally, pesticides are often know to reduce biodiversity, NOT to further it like the farmer claimed. Some are even (knowingly) a huge health risk to anyone consuming the final product or near the fields as they are increasing the risk of diseases and particularly cancer. I am a bit disappointed at the Sorted team that they were so ready to be utilized by this transnational company for their greenwashing campaign...
