You could go up/down by putting dirt above your head and planting oak trees. They would grow "up" 2-3 spaces past your current platform. Giant spruce would let you get way "up/down".
I made a modpack like this a while back, and giving the anchor soulbound helps immensely. We also used a starter gear mod to auto equip new players with a soulbound anchor. In this way, you can actually even make this work in hardcore... Have fun with that 😊
