"How are businesses worth so much money?" Well... they actually buy the equipment and furniture to set up a proper food business. A lot of that "estimated value" is in the property and equipment, and it's based on their annual income. This is a game though, so it's more likely the devs wanted to make it very expensive to buy out your competition.
