MOS's with civilian job applications are more like blue collar experience. It won't replace a degree. Also keep in mind, the military tries to make each job simple and idiot-proof, so it will never be as in-depth as it seems.

One thing I've always found agonizing about the electronics field is that almost everyone is either an engineer or a technician. The engineers run SPICE simulations, draw diagrams, design boards in OrCAD, study data from tests. All fine stuff, a good career. But then I also enjoy poking at boards with an oscilloscope probe, troubleshooting glitchy systems, experimenting in the lab, soldering, and all the hands-on things technicians do. I have a few times in the past applied to electronics technician but quickly was pushed out for being overqualified. Am I doomed to doing only engineering work all day, never once to track down a solder bridge or put together a dozen prototype thingamajigs for testing? Luckily, most EEs do spend some time in the lab, usually know their way with lab instruments. Surprisingly few are any good at soldering, at least so far as I've seen. But there is overlap in some companies.

It's definitely an interesting dichotomy, choosing to be a tech vs engineer with different responsibilities. It also could be a small vs big company thing. At a smaller company, you might be able to have a larger range of responsibilities, while a large company they want to pigeonhole you into very specific tasks.

My degree is in physics but I've been seriously involved in electronics since a kid. Electronics is easy, effortless, enjoyable. I'm happiest at work when there's an oscilloscope on my desk and schematics spread out all over. But with no BSEE or MSEE, and too many past positions on my resume not involving electronics, but software (not easy, not effortless, very not enjoyable) is it realistic for me to land an EE or similar job? What types of companies to aim for?

20+ years in electronic engineering.............. Just get an office job, and if you like electronics then keep it as a hobby. Office job = comparable pay, better hours, benefits like health care/etc, you don't need expensive qualifications and you won't have to tolerate being treated like dirt the way that engineers are treated.
