He's right where he needs to be. Beef tallow is a trend and not a good one. Go to any great BBQ stop and not one uses that crap. It's a cheat for juicy but overly fat brisket. I'm sure he's improving everyday this just isn't his time.

I’ve smoked 1000’s of briskets in my life working at bbq restaurants, n my man, this shit looks absolutely spectacular! Even that bark how it’s glistening like that. Keep up the good work!
@@PoAssProductions Why would you want to taste either one?? It all gets infused into another depth of flavor. The fish sauce has MSG so it's definitely going to elevate the flavor and beef fat is "rich". They literally both increase the umami level lmao.
@skrrtskrrt9288 agreed. Binders are for binding, you never end up tasting it. Spritzing it though throughout the cook with fish sauce would probably bring out the flavor.

This comment doesn't even make sense. When has ANYONE served medium rare brisket anywhere?? lmao. For the folks that know how to cook this cut, they understand slowcooked is the way. Crockpot/slowcooker (ropa vieja is a version) or smoked.
