Beef Caldo Recipe | How to Make CALDO DE RES | Mexican Beef Soup Recipe

Caldo de Res is one of my favorite soups. This recipe is the way I like to make it. You can add the veggies of your choice and chayote is a traditional veggie I grew up having in beef caldo. If you can find it, use it in this recipe.
INGREDIENTS
3 lbs Beef Shank
6 to 7 quarts water
2 cups beef broth or stock (or water)
salt to taste
5 cloves of garlic
1 medium onion
5 small to medium carrots
3 celery sticks
3 to 4 potatoes
head of cabbage
3 Mexican squash or zucchini
2 fresh ears of corn
8 quart stock pot w / lid

My late mother used to make this yummy soup. On cold winter days I couldn't wait to get home from school cuz I knew there would be fresh made tortillas & this soup! I never got it quite like mom did but I'll try again using this recipe. Thanks!

Same! Way my grandma use to make it was that she would add some lemon into the broth near the end, but what made it so awesome was that she would start making it at 6 am and its be done by 4pm. it was and still remains to be the best soup I would ever have in the winter. Trying to learn how to make it myself.

Making this soup today on a raining day in Michigan! Ever since moving away from California I had to make my own favorite Mexican dishes. I sure miss driving down the block to my favorite Mexican restaurant who made it. But, I think I for sure I enjoy mine more!

So good, just like mom made it. Dad and now I would cut up chilé serrano and fresh avocado, cooked arroz and put it in the caldo with some lemon or lime. YUM!

My mom boils the meat too but she adds one whole onion and 2 garlic balls and boils the meat with them. She says it adds flavor to the meat

This looks bomb! First thing I do before cooking or boiling any meat is...I boil it first to take all that yucky stuff off.. Then I rinse it and the pot good then start cooking it. I hope this helps someone :)

I made this tonight and I followed your recipe exactly and it came out SO DELICIOUS. Thank you for sharing. It brings back memories of when my mom used to make it for us but now she’s gone so it’s nice to be able to make it. When I saw you add cabbage.. I was like my mom never did that... but she did lol.. I just never knew what that veggie was when it was floating in the soup and I wouldn’t eat it lol. Thanks again!

You make your caldo like I do, except that I like to eat it with flour tortillas and I don’t add lime to my caldo or tortilla. (Although I don’t think you added lime to your caldo.) Another thing I enjoy about your videos is how you explain things for those who are new to cooking. And I love the background music as well! Thanks again! 😋

I've been wanting to make this for years after moving out from my moms. After getting covid last week my stomach hasn't been great at all and all I've been craving are soups. Looks good! I add garbanzo beans and fresh cilantro while it cooks. But I add the veggies in different times. The softer veggies at the end. The cabbage turned out mushy

Excellent tutorial! Thank you! I like to soak the meat in a cold brine solution for 1-2 hours. This really helps get rid of the blood, thus minimize the "foam and scum" later.

Baby potatoes skin on is much easier to cook and stays whole also skin on carrots. I would add whole garlic head since the beginning. I like to add salt and cilantro 10 min before turning off flame. I like that you skimmed the caldo that's exactly what I do to any boiled meat water.

I enjoy the clarity of your video and instructions. I always watch your videos. This is similar to a Filipino recipe that i really enjoy. It’s called “bulalo”. The only difference is they don’t use celery, squash, and garlic, and they use fish sauce for flavoring. Cabbage is used but sometimes they use bok choy too. Some of them sear the meat prior to boiling it, giving it a nice smokey flavor. Thank you for this recipe! I’m making this this weekend.

I personally like to use the small red potatoes. Another tip to make it very tastful is adding cilantro and cumin while cooking.

Got food poisoning 2 days ago. Since I move away from my abuela I have to make caldo alone. I always crave this when Im sick and now that I can eat again Im boiling the meat now! Found some frozen salsa from the last time I visited my abuela. Love adding her salsa to bites of caldo

Well Mija, I made this caldo and it was EXCELLENT! I enjoy your videos, they are so well done and accurate. I have now made your whole wheat tortillas, tamales, empanadas, Charro beans and this wonderful caldo. I loved the WW tortillas and stretched them out for burrito size tortillas. I really like that you make smaller size recipes. I even made the empanadas with WW flour and they were the best I ever made. I eat a lot more whole grains these days due to a recent diagnosis of diabetes. I was really missing fresh tortillas until I found your recipe. ¡Que sabroso! One more thing...I also saw your video about trolls, and all I have to say about it is this: Well done Mija! Stick to your pistolas! Best wishes to you and yours this new year. :)

My husband likes to rip up The tortilla and put in the soup and I’ve eaten it that way ever since 🤤🤤soo yummy. I’m gonna add lime next time. Thanks for this recipe. It’s so easy to follow. I’m a Latina but I hated cooking when I was younger and now instead of calling my mom every two minutes to replicate a recipe. I can just surprise her with a meal 😂

Am watching this video because tomorrow I will prepare this caldo de res for the first time to my british boyfriend, who has never try it (or heard of it) before. I have all the ingredients in the fridge, except for the corn tortillas!! (Not common in London) Just an additional tip, I´d add a tomato sauce, made in the blender with tomatoes, onions, garlic- for a richer taste, and serve the caldo with some red rice too! Looking forward for tomorrow! xx

Yes! I love adding the blended tomatoes too. I actually prefer it that way with lime in it. My husband and kids like it with out. Wow I hope he likes the caldo. I love It! 😁

Looks good, I fell in love with this in Cali. I lived in Belize last year- the beef when boiled was totally absent of the foam. I was surprised. The meat and chicken there was so different. So fresh tasting.

After seeing 10 other recipes , yours is the best recipe for caldo de ress. I have used your recipe twice and always comes out perfect. Others don't use cabbage they use green beans and others use harmonys.

Love, love, love your cooking! Instead of white onion I use green onions. I also add 2 bay leaves, 1 can of garbanzo beans drained, and some cilantro to the soup when you add the cabbage and others, and I also season the broth with 2 Knorr beef bouillon cubes. I serve it with a bit of lime, cilantro and avocado slices; with a side dish of Mexican rice topped with a spicy delicious salsa or a jalapeño pepper......nd Presto!!!

I use beef short ribs ,also put potatoes. I make Mexican rice to put in it when serving it. Corn tortillas and canned jalapenos. Love it. From Gloria

I made this today and it was delicious! The weather is in the 80’s, but the calendar says November. The calendar won. Thank you for your recipes. Last week I made your carne guisada, something I don’t eat (don’t like gravies or sauces) and my family loved it! I will be making both these dishes again.

This is 1 of my go-to recipes. I follow this video I just cut my vegetables in smaller pieces and the corn I cut into 2 pieces because we love the fresh corn on the cob. Thank you so much for this video.

I make my caldo with only the potatoes, celery, and cabbage. Love how you cook your dishes, reminds me of my moms.

Made it today. Added Aromatics in the last half hour of cooking (Cilantro, Marjoram and Mint). Did salt to taste and added lime for acidity. It was awesome. Thanks for the recipe!

Im so happy I found this video it looks just like my mother in laws caldo I'm from louisiana and cook mostly southern or soul food. He never gets this when we aren't at his house because he works out of town and im so happy i can surprise him with this

We have the same similar soup/stew in my Filipino culture called Beef Nilaga and Bulalo, we add almost the same veggies, but we add fish sauce to enhance the broth along with the beef boulion. We eat it with rice and dipping sauce on the side is usually soy sauce or fish sauce.

I like to keep my vegetable small so I can get a taste of everything in one spoon bite. That's just me! I remember my mom and dad would put these huge pieces of vegetables. Taste good but just easy and more convenient to eat with small veggies. But each there own. Love it

I think the squash and cabbage cooked very tender only adds to the flavor also its a soup not a entree per say and yes mexican rice on the side takes away from the soup stewing all at once together creating one flavor by six items...made your chile rellenos boy was it a hit thank
