Beef, Mushroom & Guinness Pie

This is a pie we made in my bakery for years in the UK and here in Spain too.
It's real comfort food at it's best. In the video I used a shortcrust base with traditional Puff Pastry top, however, you can use whatever pastry you prefer.
Recipe:
Ingredients
1 kg chuck steak you may know it as crop steak or braising steak, in Spain look for Estofado , cut into 2.5cm cubes.
2 tbsp vegetable oi l preferably NOT olive oil
2 cloves garlic chopped
1 onion medium finely chopped
1 carrot finely chopped
2 sticks celery finely chopped
3 large carrots halved lengthwise then cut into 1.5cm pieces
2 tbsp plain flour
300 ml Guinness or red wine. If you don’t want to use alcohol simply add extra stock.
500 ml beef stock Fresh, Carton or cubes will do.
2 - 3 sprigs fresh thyme or 1 tsp dried thyme
2 bay leaves fresh or dried
200 g bacon or panceta diced I use unsmoked streaky bacon
300 - 400 g mushrooms cut into quarters, I like to use Portobello mushrooms but any will do.
2 sheets puff pastry you can buy this ready rolled in all supermarkets (enough to cover you particular pie dish)
1 egg yolk for glazing the top of the pie.
PLEASE NOTE: On my website the recipe can be scaled to suit your gusts. Change the number of servings and the ingredients will automatically change.

This is awesome! Gonna try it for sure! Thank you for posting such a detailed recipe Another thing that I like about your clips is that they are so educative, and without the unnecessary frills! No distracting music, no prancing around, no superfluous repeated expressions of "that's so good!", no self aggrandisement and no theatrics. Just plain simple value added stuff! 👏👏

Mr. PAUL, I made this dish today, did a little of your tricks got up extra early and made the filling before going to work, and brought it all together in the evening, absolutely delighted with the recipe, we had a full family meal even with our lads girlfriends joining us, every one enjoyed it very much, we also cook for a lovely elderly neighbour twice a week and she called us to say how tasty your dis was, thank you so much for sharing your many years of experience with us all. Hi Mr Paul, I have discovered a product that far outshines stock cubes, powders and Bovril/ marmite.”Better than bullion”. It comes in a small jar but you don’t need much of it, it gives a lovely meaty flavour without being overpowering. Knorr stock pots are also a brilliant. The only problem with the “Better than Bullion” products is that, other than roast beef, the other jars in their range (chicken, fish, lobster etc) are very pricey in the UK (no idea how much they are in the USA)

Thanks Mr. PAUL, Again for sharing a fantastic classic dish, but also a big thanks for sharing the skills to create the dish, I've felt guilty making many of your dishes by buying shop made pastry, I'm working full time and have enjoyed cooking emencely, I began cooking when my wife became unwell suddenly and had to be admitted to hospital, leaving me with a family to feed, your skills and teaching gave me the confidence to cook, very addictive 😀

My first job after leaving school was as a baker (apprentice), later went on to chef, but absolutely love the idea of a shortcrust base and puff top. So much better than the purely 'lidded' pies you get, normally in a ceramic/pyrex bowl with just a puff pastry lid on top. Nice one Mr. Paul.

It was a very hot one this year, we were in the 40ºC plus for quite a few weeks. Fortunately being a baker all those years I got very used to the heat so it was no big deal for me, but very difficult for many. Thanks for watching and taking the time out to comment.

Hello Mr Paul!! I bought 4 of those individual oval pie tins a couple of years ago, and can vouch for your comment. My initial thought on seeing them was 'Good heavens - they look very small'. But they are deceptive and hold the perfect amount of filling. Once they're on the plate ready for eating, they're the ideal size for a hungry diner!!! Great video, beautifully explained. @@MrPaulsPantry How interesting!! Pneumatics at their finest!! I worked for many years in Wandsworth, SW London. On one occasion, after a service in All Saints' church Wandsworth High Street, I was chatting with a lady (her name now escapes me, I'm afraid) who restored fairground organs. Although more of a classical/liturgical player, I love cinema organs very much and in my mid-late teens spent many happy hours 'playing' (very badly) the Wurlitzer organs in my two local Granada theatres (Welling and Woolwich), and in a few other venues in London. Lovely memories of very happy days when London was a very different city to what it is today. Did your fair ever come to Blackheath? If so, I might well have seen you!! Thanks for commenting, Paul. The dogs and I are doing fine, especially now it's cooled down slightly. I had one for my meal last night and the dogs enjoyed a couple between them, they thought it was never going to arrive as these was quite a lot of waiting around between shots. Regards to you both x

Good morning Mr Paul Thankyou for showing me how to make your Beef Mushroom and Guinness pie. I made this and it was delicious. I will be sure to make it again! I have a request for you.... Do you have a recipe for Traditional English Cream Buns with a strawberry jam filling? I remember our local Baker making these years ago when l was a young boy lol ,so fresh and tasty ! I miss them and would love to make them at home. Its always a pleasure to watch your videos and learn from your experiences.

Looks absolutely delicious! The cooking temperature was it for a normal oven can I lower the temperature by 20c for a fan oven?

Hi David, I'm not certain about that as I own a very old oven with NO fan. Sometime ago I did tell people it was 20ºc lower but got lots of complaints saying that it was not correct their oven. Thanks for Subscribing

Brenda, that pan is 27 years old and has not lost any of it's non stick properties yet. I think they just don't make them the same these days.

Could I ask I usually flour the meat in a bag along with the seasoning, before browning. Does this matter? Coq au vin is another lovely recipe. Do you have a simple recipe for this. Instead of a fussy TV Chef one?

Thanks for this recipe. If cooking extra to freeze can we freeze the pies then bake from frozen, or would it be better to thaw them first?

Hi Jean, they should be thawed in the fridge overnight, then egg washed and baked.

I freeze them uncooked, then thaw in the fridge overnight, egg wash then bake as per the recipe. Hope this helps.

If you're freezing them raw you can't get them out of the tin.

Im going to make a bunch for my son in Florida. Im obviously going to have to freeze them. My question is do i cook and freeze or do i freeze then he cook them? Thank you in advance for any suggestions.

Hi Allison, you can freeze them cooked or raw, however, if your freeze the cooked pies. wrap very well in plastic wrap making sure there is little or no air trapped between the plastic and the pie. when you want to eat it, thaw in the fridge overnight but DO NOT remove the plastic wrap, this will ensure any condensation that forms will be on the outside of the wrapping and not on the pastry.

Mr. Paul, I have a quick question. ok, 2 questions . #1 what is the approximate diameter of a crumpet? #2 the pie dolly, diameter at the bottom and the total height. Nobody, state side, had a idea what a pie dolly was. But to my surprise I found a gentleman who actually makes them. Waiting to hear from you soon. I really wish your books were still available.

Janet, I have never had any cook books produced, you must me confusing me with someone else. A Pie Dolly can be any size you wish. we had ours made in various size throughout the years. You said the bottom of the pie dolly, they are straight sided, same all the way up. You work the pastry up the dolly to whatever depth you require. My crumpet rings are 3 inches diameter.

You can eat them warm or cold. The pastry I used in the video was from Lidl. Mercadona also sell it.

Using a Tefal pan here is not the best idea here because of the lack of caramelization on the bottom, and this makes all the difference. Unfortunately it's all I've currently got. It's far easier to buy a small amount of puff pastry than make it...

I'm worried that the base of the pastry won't cook properly and all the filling falls out when I turn the pie out of the tin. Can I bake the base blind first?

Why would you question someone who has been baking pies for 60 years to earn a living both in the UK and Spain. There is absolutely no need to blind bake a pie base. Take a look at the video at around the 28 minute mark, you can see my pie out of it's tin on the plate.

I do have a problem with you calling chefs who have knife skills, which anyone who can hold a knife can easily gain, show-offs. It's not showing off, it's a skill, that like any other can become 'muscle-memory', and if taught safely will benefit any cook, home, to pro restaurant. There are reasons we can slice, dice, med. dice, small dice, julienne, brunoise or chiffonade a vegetable. :)

I still stand by what I said, the so called celebrity chefs should be encouraging people to cook not showing off and making things look so complicated they actually put people off cooking. Knife skills are OK in their place, but not when teaching the housewife how to cook something. I watched a TV chef this morning rapidly chopping an onion then telling the audience they could cook a whole chicken in 20 minutes and it was good to see it pink round the leg bones, Really?

@@MrPaulsPantry I'm not talking about celebrity chefs Mr. Paul. Every person I have shown proper knife skills to, still uses those cuts to date, no one has cut themselves badly, or lost a digit, all, can still cut an onion in a multitude of dice, julienne a carrot, chiffonade spring greens, etc. It's about teaching best methods not showing off. I can reduce an onion to minute dice in seconds, but it matters not if it takes 10 minutes.

@@MrPaulsPantry I will add that unless you have access to a professional oven, I cannot see anyone cooking a whole chicken in 20 mins, a de-boned butterfly yes, but not your standard roaster. But also agree that depending on where your chicken comes from, there is nothing wrong with pink leg meat.
