Beef & Pork Smokey BBQ Meat Loaf
This is a delicious meat loaf that I think you’ll enjoy.
I looked at loads of recipes and I decided to use my own Pork & Beef
burger mix with a few changes.
Instead of breadcrumbs I used Smoked Bacon Flavor Cracker crumbs.
These work really well in the Burger recipe, so give that a try too.
Ingredients:
750gms Ground Beef
450gms Ground Pork
1 Onion finely chopped and fried
20 Button Mushrooms finely chopped and fried
(Frying the onion & mushrooms brings out the flavors)
I pack Smoked Bacon flavor crackers crushed
1 tsp Black Pepper
1 tsp Sea Salt
2 tbsp Tomato Puree
½ tsp Worcestershire Sauce
½ tsp Soy Sauce
I Egg
For dressing:
15 slices smoked bacon
1/3 cup BBQ sauce
Method:
Combine all ingredients except bacon and BBQ Sauce in a bowl.
Mix thoroughly.
Put a layer of bacon slices in the bottom of a loaf tin.
Put a layer of BBQ Sauce on the bacon.
Put the meat mixture on top of the bacon.
Put a layer of bacon slices on top of the meat mixture.
Put a layer of BBQ Sauce on the bacon.
Put into preheated oven 190C 375F for 75 minutes.
Check core temperature is 72C 160F .
Let sit for 5 minutes.
Slice and serve.
Enjoy.
