Just adding a heads-up, the water from other canned beans, even peas works as aquafaba. I'm saying this as I have some red kidney bean aquafaba meringues in the oven, 16 minutes left.

But also remember that the Aquafaba will always have a bit of the bean taste in it, so choose something with a taste you like or one that fits your recipe! How did the red beans work out for you?

Thank you! Have been wondering about that for a while. My sister is vegan so I’m constantly looking for things I can make that she can have too, but I don’t like chickpeas. I love cannelini beans though so will try something with that liquid.

I use it for Royal Icing- it’s better than the traditional meringue powder recipe. Drain liquid from 1 15 Oz can chickpeas 2+ C Powdered Sugar 1 tsp Cream of Tartar Dash vanilla or almond extract for taste Beat all in stand mixer on high until desired stiffness, usually 6-9 min. Add coloring if desired. Use for sugar cookies & gingerbread It works like a charm. ❤

AHHHHHHHH this is the best thing ever. I'm distraught that I found this out JUST after tossing some aquafaba from the fridge after cooking chickpeas for hummus!

Let me just say, you are my GO TO for all of my Vegan cooking and baking! My boyfriend and I look up recipes together and we know if we stumble across one of Dana's, it'll be a winner. Question tho: can you overbeat aquafaba?? I had a frustrating experience and haven't tried since.

Because canned beans tend to be high in salt, no salt added garbanzo beans are available from certain larger stores ("natural food" stores). I paid $1.09 for a can of the no salt added beans. They are conventionally grown, not organic. The resulting aquafaba will be much lower in sodium.

Do you know if instead of using canned chickpeas you can use the liquid from cooking the chickpeas on the stove or instant pot ??

@@seanhavern9864 Factory cans definitely contain simple (short-time) boiled chickpeas, even much less boiled (so much less reduced) as its advisable for legumes to be cooked. The only difference to freshly cooked would be, that the liquid has been "sitting" for a longer time, maybe therefore the structure has kind of "set" altogether, which may have a similar efect on the density as reduced liquid. Maybe (this is just a thought as yours :) ) a tiny amount of starch from the chickpea/legume is contained in the water, that has a similar effect. So best is to try it homemade fresh and "sat" and as you say reduced, whether there is a difference. For anyone who is interested in having the legumes including chickpeas longer cooked including removing the legume foam at the beginning - this chickpea water still works same as Aquafaba. Love

I tried the mayo - It's off the hook. way BETTER than egg mayo. although I will try one alternative next time - no or less sugar (I don't have brown rice syrup). it tastes more like miracle whip with the sugar. the texture is amazing. better than egg mayo. flavor is better than egg mayo. my skin doesn't break out with this recipe like with egg mayo. and I've been a hard core hellman's mayo guy my whole life. I don't even like vegan stuff that much usually. and for the record I though the aquafaba is gross as balls!

I always make the GF oatmeal coconut chocolate chip cookies. They are made with aquafaba too but they always are crumbly. Maybe I dont cook them long enough? I like them pretty soft :)

Hmm, sound like your batter is too dry. Try adding MORE aquafaba or less dry ingredients. Good luck!

Does it make you gassy using the liquid of chickpeas?? Embarrassed to ask, but you hear that chickpeas need to be rinsed thoroughly to prevent discomfort in the tummy. I am genuine in asking this cause Chickpeas can upset my digestive system like this. "Blush".....but I still love chickpeas...lhehe!

Good question! I would like to know too! I was told rinsing the abafaba off reduces the gassy side effects. Now it's a main ingredient. 😂

It has a pretty neutral flavor! It tastes very mildly like chickpeas.

Hello! I just discovered Aquafaba but I'm curious about how to make Omelettes. There are several guides, and I followed this, and it just turned to water? Most of the recipes said it is just Aquafaba and no flour. Please can you make an omelette and frittata video without flour, as you can just make a chickpea flour omelette, which just defeats the purpose? Thank you.

Hi there! Aquafaba works well as an egg replacement in baking, especially when you're looking for a rising quality or wanting to replace egg whites. What about baking on a cake with fresh fruit to get a Meringue layer? Not too hot I assume? Mine got fluid again! Not higher than 190 °C

You can apparently use aquafaba from home cooked chickpeas but we haven't tried it yet! It just often needs to be cooked down after the beans are cooked so it's thick enough to whip. Hope that helps!

Blended boiled chickpea water aka Aquafaba still is the naughty legumes stuff, ie its toxin parts ... just a thought ;)

(StyleME) StyleBitsnBobs yes, you can do it either way, and when you cook your beans you actually get more brine than you would from a canned bean. I’ve done it and it works :) I also failed the first 3 times so don’t give up lol
