BEST Coconut Macaroons (vegan) | THE SIMPLE GREEN

You will fall in love with my vegan macaroons…they're exactly like the conventional variety, made better! Enjoy…
Ingredients
1 Cup Cane Sugar
½ Cup Coconut milk
1 tsp Salt
2 Tablespoons Maple Syrup
2 teaspoons Vanilla extract
3 Cup unsweetened coconut shreds
1 cup all purpose flour
1 Cup chocolate chips
Directions
1. Combine cane sugar, coconut milk, salt, maple syrup, vanilla and coconut. Mix well.
2. Add in flour and stir until the mixture holds together and is very sticky.
3. Using a ¼ cup measure, spoon out the coconut mixture and place onto a parchment lined baking sheet. These will not spread during baking so you can place them 1” apart. Bake at 375`F for 15 minutes or until the tops are golden brown. Remove from oven and let cool completely.
4. Melt 1 cup of chocolate chips over a double boiler.
5. Dip the cooled macaroons in the melted chocolate covering approximately 1/3 of the macaroon. Place on a parchment lined baking sheet and place the coated macaroons in the fridge for at least 1 hour, or until the chocolate is set.

For anyone wondering-I just tried almond flour in place of white flour and everything stayed together 👍 I also added cinnamon and chilled the dough for about 20-30 minutes before scooping it out.

Hi! I made this today and it turned out great...well that's what the husband says :) On a side note, I made X2 the batch and I definitely had to use more than 1/2 cup X 2 coconut milk for some reason. Wasn't sticky and was very dry not sure if anyone else had this? Other than that, great recipe. Thank you :)

bhoomi ranpara thank you! You could use agave syrup, brown rice syrup, or corn syrup. I live in Canada so we have a lot of maple syrup around here 🤗

I made it with spelt flour! It turned out great. So I guess coconut flour would be nice as well. :)

Rachael Villalobos spelt and all purpose flour contain gluten which will help them hold their shape. If you try coconut flour, let me know how they turn out :)

I tried them with brown rice flour ( I've baked with coconut flour before and know that, although the coconut flavor is great, it is very dry flour that will soak up all the moisture) and they came out amazing! They were a bit crunchy on the outside but the centers were just the right amount of chewy :)

Shannagen thank you 😀 You could, but keep them stored in an airtight container. The exterior may loose some of the crunch after a day.

adriana julio guzman you could use coconut sugar if you like, however they may turn out a darker shade. The sugar provides moisture and structure to the cookies.

You can also order them from Amazon. Try "Enjoy Life" brand. Have you tried/can you find carob chips where you are? They're not quite the same as chocolate, but they're a fairly ok replacement. You can also use just plain unsweetened/semi sweet dark chocolate bars. Quite a few commercial brands contain no animal ingredients! :)

The Maple yrup just helps to add a touch more "gooey-ness" to the inside of the Macaroons. You could omit if you wanted to!
