I had followed your video How to Make Perfect Pizza Dough - For the House⎮NEW 2021. My wife from Campobasso, my brother in law from Palermo and my friend from Calabria said it was very good. I wanted to say a big thank you Vito because thanks to your videos and lessons i was able to develop the perfect dough and fermentation for my home (mezzo semolina mezzo 00) and stretch it in a matter of seconds, not like a pro yet but i use your slap technique. The result is fantastic, looks straight like Napoli, and crounchy like we love it 🍕🥰🥰 (wish i could show you!) Without this channel it would have taken me several years instead of half of one to get to that result, so again grazie mille and keep up the amazing content coming! Forze!

Now THIS is a great (home) kitchen layout. We can see everything in the same shot/view, you have plenty of space to move around, you have ample space for all the needed ingredients, and everything is still within arm's reach (or maybe a couple of steps away, at most). You also have decent lighting, as your body isn't competing with the piercing, strong light from the door that leads to your backyard - we can see your face clearly and all the ingredients and tools laid out in the foreground. Can't wait for more videos, shot in this kitchen. The only thing I'd suggest is to get a clip-on microphone - this will effectively eliminate the echo, and you won't need to strain your voice for long periods. Edit: Oh yeah... almost forgot: Thank you for sharing the links to all of your tools!

Yes very much, you've got content going which is awesome now to get that production quality up over time. check out @mynameisandong, he's got the studio asthetics down as well as lighting, sound, its like food for the eyes instantly which is really important in food channels. I would also recomend getting obscure glass for the door or just adding film on it to stop distractions or reflective distractions as you see @6:01/7:15 Also thumbnails you're halfway there with them, some slight changes will get way more people interested atm sometimes they are very busy (too much stuff). Hello Vito, I'm intermediate level. To be a pro I should make dough and pizza everyday which is not the situation. Nevertheless I learned so much from you. I made high hydratation dough, I made my fresh yeast and I know much more about streaching a dough and many other tricks like biga technique. I was using poolish before I discovered your channel because this is a technique I used for my bread and I discovered by myself the advantage for my pizza dough. Then I realized that I didn't invented anything when I subscribed...ha ! Continue your good job.

I made your recipe using the 620g flour 5g honey 5g yeast 400g water. The softest dough I made and I've been using it for all my pizzas from now on!

I need that dough box! Where can I get one? amazon sold out. I have a big one that can hold 12 doughs but sometimes i want to leave them in the fridge for 24-48 hrs and the big bin takes up the whole fridge. That little one for 6 would be great.

Hi Vito, I'm a fan of yours from Germany. Unfortunately I can't afford all that. Is there also equipment that normal mortals can afford? I'm buying an Ooni Koda 16 (used) today. Plus a peel made of anodised aluminum and a pizza turner, or whatever you called it, to take out. Would a shovel made of stainless steel sheet metal be better here? Or would that stick too much? is the oven good Unfortunately can not spend more than 400 € for the oven. In any case, I will always take your pizza recipes and tips to heart! =) You make the world's best pizzas!

When i make pizzadough at home i usually use 250ml of water 1tsp of salt 500ml of tippo 00 2 tbs of olive oil and 10g of fresh jeast i let the dough rize for 8 hours in room tempeature then i put the dough in the fridge for 24hours sometimes longer before i make pizza if i want to make poolish to this amount of flower but dont know how much i should make

Poolish is simply 50% of your dough and same amount of water and half of your yeast. So in your case to make poolish you need the following: - 250gr flower - 250gr water - 5gr yeast And for the final dough, you mix the poolish and the rest of the ingedrients together, thus: - poolish - 250gr flower (=500-250) - 0 gr water (=250-250) - salt & honey & rest of yeast You use 50% water in your recipe and this is quite less. You need at least 65% water to make a soft pizza. And also your yeast amount is too high, you use 2%. For long fermentation you need ~0.3%. With 0,3% yeast, you let the poolish rest for around 12h-16h at room temperature, then mix it with the rest of the ingredients. After that, bulk fermentation for 6h at room temperature, at this point you can also put your dough to the fridge. Then form balls and let it raise for another 1h-2h.

@@Aemulatius thanks i made the napolitan pizza from vitos perfect pizza dough recipe i know this dough is not as soft but in my home oven it only goes up to 200 celcius and the crust is good even in that temprature i usualy use fresh yeast cause its the most common in sweden Thanx for your help with the poolish
