whether you have the same cheese or not, i still think you can make a good grilled cheese. just make sure the cheese has some good melt, flavor and that they work well together.

looks good and all but to me the best grilled cheese has ham and tomato. Gotta deseed the tomato to keep the sandwich from getting soggy, and if you want to go the extra mile you can fry the ham too, and maybe throw on some dijon on one side of the bread. Your cheese mix was just right though
