There are many currency stores in that part of the map. I can recommend Nadir Doviz, it is the biggest one in my knowledge. There is also Marmara Döviz, which is also quite good in my experience.
There might be exchange shops for IDR, but the rate wont be good since it is not a popular currency in turkey. I recommend coming to turkey with USD or EUR.

There are plenty of currency exchange offices and banks. You can choose any of them. However, I wouldn't change all my money at the airport, because rates are not good. I would just change $100 at airport and I would change the rest of my money in Istanbul City Center.

It depends on the exchange office. In Istanbul, I havent seen an office that asks for commission. You just get what you see on the board when you sell USD and buy TL
