Dear internet, Do not use(step 5) the field sharpener on your steak knives. Or any stropping compound (Chromium oxide) on anything you intend on putting in your mouth. Good video btw
Did I understand this right? You did more than 100 passes on each grit stone to sharpen the knife? I was planning to buy this and have more than dozen kitchen and EDC knifes to sharpen... It would take me like a few hours to do them all....
No. The “angle guides” provide no positive control of the proper edge angle. In this, it is no different from a manual sharpening stone, which I abandoned years ago in favor of the Lansky system. Still using it.
Good job. I used a Lansky for many years. It works good and is fairly easy to use. But I just bought one of these Work Sharp Benchstone models. Much better. It's quick and easy. The 600 diamond plate followed by the ceramic plate, and I have a blade that is plenty sharp for me. and it's easier to use than the Lansky. IMO.
