I tried to follow this recipe but ended up doing a lot of my own interpretations of what I thought you may be using. The red powder I didn’t know what it was, so I just use red pepper flake. I also substituted about half of the amount of potato with sweet potato so it was a half-and-half recipe and it worked out quite well. I substituted oven roasted jalapeño and hatch green chili that I had frozen. Not ideal, but it did not hurt the dish. This is a very good recipe except the masala that was towards the end or something I did not have on hand, so I left it out entirely. It was still delicious. Thank you
What (and how much) is dumped in at 3:56? Looks like red pepper? EDIT: Saw others says chili powder :) I made this tonight. Maybe I got the seasonings a bit wrong as it was a little bland but still very tasty.
You can used store bought. Otherwise you can make it using a 1:1 ratio of ginger and garlic. For example 100gms garlic with 100 grams ginger. Grind to a fine paste. Add a little water as you grind so you get a paste like consistency.

Ok ok .. .tried this tonight. I seem to have messed up (however recovered). At the end where you say simmier for 15 minutes, is this on high hit or heat reduction? After 15 minutes I sitll had a lot of water not going (lid was on). Was this because I put too much water? I spent about 30-40 minutes reducing the water amount, re adjusting seasoning to then get a perfect test and texture (approved by an Indian Chef I live with.. although told me to add a lot more salt in general). So all in all. 10/10 thank you for the video but I got lost on the last part, any tips?

Mine went terribly wrong 😂 not your fault. Looks like a great recipe and I will try again sometime. I used ground cinnamon and spices and they burnt immediately. I also had to substitute a lot of things because it's 1am and I can't go to the shops. I was just craving potatoes 😋 oh well, I'll try again properly soon
