This Chicken Gnocchi Soup is better than Olive Garden! Loaded with tender chicken, chunks of vegetables, spinach in a creamy, flavorful broth - don't forget the crusty bread!
Ingredients
2 tablespoons oil
1/2 medium onion finely chopped
2 ribs celery finely chopped
1 cup carrot matchsticks (or finely chopped carrots)
1 teaspoon dried parsley
1 teaspoon minced garlic
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
2 boneless skinless chicken breasts cut into 1/2" pieces (or whole, see recipe instructions)
4 cups low sodium chicken broth
3/4 cup heavy cream
1 tablespoon corn starch
3 cups small gnocchi (500g)
1 1/2 cups fresh spinach roughly chopped
1/4 cup grated Parmesan cheese
Instructions
In a large dutch oven or soup pot, add oil and cook onion, celery and carrots over medium-high heat until slightly softened.
Add parsley, garlic, thyme, salt and pepper and stir.
Add chicken breasts (if you prefer, you can add them whole, and shred them after cooking) and broth and bring to a simmer over medium-high heat. Reduce heat to medium low, cover, and simmer until vegetables are tender, about 12-15 minutes.
Whisk together cream and corn starch and stir into the soup with the gnocchi. Let simmer for 4-5 minutes until gnocchi is tender and soup is slightly thickened.
Stir in spinach and Parmesan and serve.

I’ve never made gnocchi soup before, but I follow this as closely as I could. It has turned out amazing! This is giving me a lot more confidence to cook more often. Thank you so very much!

This is my secret weapon whenever im sick or feeling under the weather! I also have made it for guests and its a hit every time! I’ve never added parmesean though and normally I shred the chicken but im going to try and add parmesean tonight ❤️😍

My suggestions if you want best results use knor chicken bouillon tsp a cup of water don’t use low sodium chicken stock it won’t turn out good still use the salt double the recipe do one with heavy cream one with half and half follow everything else I didn’t even put the cheese in it and I surprised myself also the way you cut your chicken is crucial

Looks great. I made mine similar but I used ground nutmeg and instead of celery chunks, I use celery salt.

I went shopping yesterday and gather up all the ingredients however, did not know needed parmesan cheese. Oh man, we had a bad snow storm. Not sure if i am able to get out for that one last item. Your recipe looks good!!! Yes, the recipe i found didn't call for cheese but i like it cheesy.

Are you from another 🌎!??? ❤ it. Kudos to you for being so caring. 31 yeas of life and I’ve never had anyone cook for me like that. I think I’d have a heart attack. She’s an extremely lucky girl. I made it and it was so good but it was not thick at all why is that? How can I make it little thick and the vegetable wasn’t soft either

You need to cook until the vegetables are tender, as the recipe says. Then add the cream and corn starch to thicken. If it is not as thick as you would like, you can add additional corn starch dissolved in water. It sounds like your vegetables were not cooked, and as they cook they will absorb some of the liquid.

Late but what does it mean by cream? (I'm new to cooking) would something at the store just say cream and I grab that?

The recipe calls for heavy cream, so that is what you would look for.

You can add milk if you like it’s still good. Believe it or not I use almond milk and no one ever knows and it’s still delicious. Just add a little at a time till it’s to your liking. I don’t use milk or cream that’s why.

Question, why Chicken Breast? Would chicken thigh be better? This looks like a fatty creamy soup! That thigh fat would be better?

OK, how is one expected to remove all those chunks of chicken breast to shred? Seems like a lot more work than simply halving or quartering them 🤔

Since they are cut into 1/2" pieces, why would you remove them and shred them? Most people can handle a 1/2" piece of meat

Do you need the onions because me and members of my family absolutely hate onions. (Sometimes they are soft enough for us not to notice, so is this like that?)

They should be soft! You can always leave them out.
