What cut do you look for at the butcher shop to do picaña?

Canadians are so hardcore that they have dual green egg setups and flame throwers. How's the clearance on that for chickens and turkeys? It's hard to tell from you video. Also, since you've had it for a minute, how's it treating you? It looks like it's a little jerky at some points in the rotation.

Too bad I ordered mine in December 2022 and still have not received it !!!
