It's actually burnt cream. Other countries in Europe have claimed to come up with this easy dessert custard as well, but for whatever reason people like the how it sounds in French. Not that I blame 'em. Sounds pretty fancy in French.

Suggestion Pour the water first before you put the ramekins in the dish Place the dish on the oven rack before you pour water so it wouldn’t be so hard I think white sugar is the best for caramelizing Tips from my grandmother who was a French baker.

Trying to place ramekins in basically boiling water isn't very smart, and it's easy to overfill the pan if you don't take into account the displacement of water they make. I just don't understand the towel choice. It definitely made them harder to retrieve after baking.

For vanilla sugar, you can also use the pod as usual (scraping out, boil out the pods in the milk/cream mix) and then dry the scraped pods and put them in the sugar jar. I do that even with my plain sugar, gives your morning coffee a nice aroma

Some late pro-tips: Put the water in first. It doesn't have to be hot, the water is just there to equalize the temperature around the containers. Let them cool inside the water, at room temperature for about an hour. This will prevent the cracks forming and make it was easier to later on take them out. Then just cool them in the fridge with the water also.
