You thought Dulé Hill couldn't steal the show once again after his residency on the West Wing - well, back by popular demand, he's reprising his role as Burton Guster in the tv-movie revival of Psych this weekend. Revel in the duo's stoner-like propensity for hilariously unhealthy snacks with this week's recreation of a fan favorite: potatoes, stuffed with four cheeses, deep-fried, breaded, and re-fried, nestled on a bed of ancho sour cream and crispy bacon.

Because big potatoes like they had were not likely to be able to be cooked all the way through. So Yukon gold could get a good size in a regular potato. They have the drawback of not tasting as good as Russet would... but with Russet, he has to do a lot more prep work

I made these last night and they turned out wonderfully. Like little deep freid baked potatoes. Of course I added bacon bits to the potato mix, and used goldfish crackers to make the breading. Also, I made half the cheese cubes out of mozarella, and sliced each down the center and paired them with the cheddar. That way each fritter has the sharpness of the cheddar, but the stringy bit of the mozarella.

I tried making these about 8 years ago with small red potatoes, and they were a beautiful disaster. Parboiled first, then stuffed, deep fried, and fried again. Ooey gooey inside, but still mostly raw potatoes. Thanks for taking these on. Psych was was my favorite show, and Im so happy to watch you every week. ❤

@AndrewRea I know the whole block of cheddar didn't give u the meltiness factor you wanted, so, and you might hate me for this suggestion, but, take the four grated cheeses like u did originally and mix email around in a bowl. Then, compress them together to form a solid block of mixed cheese (still cold, obviously don't melt) and then seal and freeze till hardened. THEN, cut cheese cubes and form with the mash potato into balls. Let them come to room temperature so ur not frying completely frozen cheese. You'll see that it's everything you wanted from the beginning. If u triple cote the mixed cheese blocks with flour and fry, they also make excellent cheese sticks (similar to mozzarella sticks but more flavor). You rock Babish!

I'm sure this has been suggested hundreds of times, but I'd love to see cornballs from Arrested Development. You could throw in a frozen banana for good measure! I'm not even sure what the cornballs are supposed to consist of besides corn, but as long as you burn the shit out of your hands while you make it it'll be authentic enough.

I love that you mentioned Scotch Eggs. I'd never heard of them, and then one of the guys in my D&D group made them for an all day game we played called Pendragon. Every Pendragon session was paired with a glorious meal that we ate on all day. It was amazing. Dipped them in syrup.
