Happy Chinese New Years! I've started eating the Raw Til 4 diet which is just eating God's Healthy Whole Foods! This is a spicy, tasty, lucky Black Eye Pea Stew found in Forks Over Knives Cookbook.
Recipe is as Follows:
1/2 Cup Black Eye Peas (drained or soaked)
1 beet
1 Large Carrot
1/4 Parsley Finely Chopped
1/4 Teaspoon Cumin, Turmeric and Cayenne Pepper
1/8 Teaspoon Asafitida
1/2 Tablespoon of Lime Juice
1 Teaspoon Salt.
Combine the Peas and 3 Cups Water over Medium Heat for 20 minutes. Add the Beet and Carrot, cook for 10 more minutes. Add the spices and the parsley and simmer for 5 minutes. Top with Salt and Lime and Serve over Rice or a bed of Lettuce.
