How to blacken fish in a cast iron pan.
I recommend doing this outside if possible.
If you are cooking at the right temp there will be a lot of smoke.
I use Paul Prudhommes Redfish Magic - it's my go to seasoning for blackening fish, shrimp, or even chicken.
You'll also need some stick butter - I use unsalted. Here I used about a stick and a half. You'll want to melt the butter and add some redfish magic to it.
Then some fish. For this cook I went with catfish. Any white fleshed fish - like catfish, cod, snapper, etc. would work.
Get the fish seasoned liberally,
Get your cast iron super hot,
Throw some butter in and then your fish.
Flip after 2.5 - 5 minutes, depends on the heat.
baste with the butter mixture regularly.
Flip as needed / baste / repeat until you reach your target temp.
Serve.

Damn that last fillet looked cookbook-perfect, and I really liked the idea of using the blackened-oil-splash to finish out the fillet! It really added the right amount of color and (seemingly) flavor without feeling gross and burned. Now I gotta try this tonight

You NAILED it! I'm a Louisianian of over 50 years. The 3rd filet looks "spot on". This is how I learned to cook it, and it turns out AWESOME! Liked, Subscribed, and Bell "on"!

Really great video. I'm making. a blackened steak tonight on charcoal grill. My hubby doesn't want to have to turn off the smoke alarms again! Blackening in house is more than a smokey notion! 😅

I cooked three filets. All came out awesome. Thank you for the video. Can't wait to try this again. Even my wife liked it and she hates fish. Can you do the same for thinly sliced chicken?

Thank for the step by step recipe! Going to try tonight with some fresh Mahi. Would you recommend using the cast iron skillet on the grill?

Mahi would be a great fish to use for this. I would recommend doing it outside if at all possible unless you’ve got a really good fan above the stove that actually vents out of the house. You can totally use a grill, I’ve done it on charcoal and gas - charcoal makes it a little harder to control the temp but it’s very doable. Thanks for watching!

You had room for all three filets, the third or last will taste different because the butter is already burned.

Blackened seasoning doesn't have the intended taste unless the seasoning is burned. It gives it a unique flavor that is nothing like the seasoning itself. It's really good, I do it with fish and shrimp all the time. I don't use butter though. Watch this video of a guy blackening shrimp.
