How to blacken shrimp in a cast iron pan.
I recommend doing this outside if possible.
If you are cooking at the right temp there will be a lot of smoke, and the seasoning produces a smoke that will burn your eyes, kind of like low grade CS gas.
I use Paul Prudhommes Redfish Magic - it's my go to seasoning for blackening fish, shrimp, or even chicken.
You'll also need some stick butter - I go for the unsalted.
Then shrimp. For this cook I went with the big pink guys.
Get the shrimp seasoned liberally,
Get your cast iron super hot,
Throw some butter in and your first batch of shrimp.
Flip after maybe a minute and a half or so,
Add some butter, another minute and a half or so.
Pull them off.
Do your next batch.
Take the cast iron off the heat, add the rest of the butter and throw all the shrimp back in the cast iron and serve.
The shrimp will continue to cook at first until the cast iron starts cooling so it's not recommended to overcook during the first part of the cook.

Nothing beats a hot cast iron for a good sear! Wouldn't use anything else for blackening.

Yeah, we like flavor here lol. None of that “sprinkle this entire chicken breast with 3 specks of pepper and a pinch of salt”.

I just cooked shrimp and they stuck to my cast iron. Perhaps I did not heat the skillet hot enough? It's pretty well seasoned/smooth. Need to get this right. Cleaning it afterwards sucked.

It needs to be very very hot. I never cook this inside due to the smoke produced. Also a very liberal use of butter. I’ve never had shrimp stick doing it like this. Really I don’t have anything stick in my cast but I’ve used all of it a ton.

Crocs are the most comfortable shoes in existence. Utilitarian too. I wear mine out, wear em fishing, wading, hiking, you name it lol.

Just a propane burner stand. Got this one from bass pro for like 30 bucks, came with a deep metal pot and basket for deep frying.

Get it hot, put water in it, scrub or scrape junk out, dry with paper towel, reheat to evaporate remaining water then take off heat, put a little oil in the pan and wipe it around to coat

how much seasoning per lb. would you think? I know that stuff tends to be salty, a good blackening is a real treat. Looks really good, but I may have to adjust so my cardiologist doesn't' get too mad at me.

Oh I don’t know to be honest. I just coat it till it looks good and covered. Not super caked on but a good coat for sure. They might make Cajun or blacken seasoning that’s salt free, probably worth checking out. I would think the strong flavors would cover for the reduced salt.

I've done that, I'll also sometimes season in the bag the shrimp comes w/ from the grocery store and shake it up. Neither, in my opinion, gets as much seasoning to stick as just throwing em on a board and seasoning each side. Even with how heavy I go on seasoning, a bottle of Redfish Magic will last me /at least/ two cooks. Considering a bottle only costs like 4?ish dollars, I'm not too worried about losing some seasoning to the board.
