These Breakfast MUFFINS are the Answer to enjoying a blueberry baked good while keeping the principles of stable blood sugar, gluten-free, high fiber, and dense nutrients!! To make this so productive you can add extra berries and a cashew cream blueberry topping.
Conventional Blueberry Muffins contain a whopping 40 to 46 grams of refined sugar - making them OFF LIMITS to any metabolically challenged person with sugar issues or following a Low-carb dietary lifestyle to beat disease!
We have utilized high fiber naturally sweet natures carbs to sweeten - bananas and sweet potato with 1 -2 T of Pure Maple Syrup (I used only 1 T here )
I used Organic unrefined Avocado Oil in the video as a swap for the Coconut Oil in my recipe - it works just fine.
1 Can of Organic Sweet Potato puree - is swapped here in the video for steamed sweet potatoes that I pureed in the food processor.
I have used the dense Coconut Flour here 1/2 cup - another option is Tiger Nut low carb Gluten-free flour but you'd need about 13/4 cups. Coconut Flour is high in fiber and dense and is about 1/3 to 1 cup of regular flour. Helps the muffins to be more filling and dense but work to keep blood sugar stable.
To add more Fiber and Nutrient we have pulsed Sprouted Rolled Oats into our own "flour" This way you can manage the quality and not have to purchase another Oat product - these are the same oats used for Overnight Oats or stove top Oats.
I have also experimented by adding a tablespoon of ground Flaxseed - more fiber
RECIPE
2 Bananas Mashed
1 15 Oz Can of Organic Sweet Potato Puree
1-2 Tablespoons of Pure Maple Syrup
1/3 Cup Melted Virgin unrefined coconut Oil or Unrefined Avocado Oil
2 teaspoons pure Madagascar Vanilla
1 teaspoon fresh squeezed Lemon
1 Cup Sprouted rolled Oats (turned into flour in a food processor)
1/2 Cup Coconut Flour
1 teaspoon baking soda
1/4 teaspoon sea salt
1/4 teaspoon nutmeg
1 teaspoon Ceylon cinnamon
2 Cups Wild Blueberries (frozen rinse with water and drain well)
heat oven to 375
use 1/4 cup measure to transfer into muffin cups
cook for 25 minutes - cool on a rack
top with more fresh berries and some fresh blueberry "frosting" made with Cashew butter and wild berries about 1/3 cup each and 1/2 teaspoon lime juice whipped in a small blender
