How you add flavor to your cider, wine, or beer is an often debating subject. Do you use extract flavors or real fruit. Which gives you better results when flavoring your drink? Today I do an experiment and compare extract vs fruit flavorings in a cider for an epic Blueberry Cider recipe you will want to try!

Love a good options/comparison video! When batch size allows I'm a huge fan of split batches with specific variables and try to do things like that on most brews. Same amount of brewing, twice the learning 😎

You nailed it when you said extracts are the most useful when you need to get a very niche type of flavor that's difficult to get. For fruit flavors, I really like to use fruit purees but sometimes that doesn't work exactly how I want. Great video!

I haven’t used purées too much but I’ve also heard mixed things. Adding fruit is always a bit of a toss up depending on the fruit. But that’s what experimenting is for!

I never use purée after doing that once on kombucha and finding it to take about an hour to filter that crap out of my brew! No thank You! Chopped fruit is much better!

This right here! After watching this and your other cider vid's I realize I've been using my potassium sorbate all wrong. I'm going to try this one and the apple pie one you made a video on. Probably the mango one too. I am a big fan of cider as well as beer. :)

Planning on bottle conditioning some hoppy cider with frozen blueberries, and honey for the carbonating agent in the morning. Hope this goes well.😅

Hi! Love this, short and concise! What would the difference in using fresh fruit vs frozen fruit? And should they be chopped first in the mesh bag?

That would be a good experiment. In my experience frozen works best since it released the flavors more easily

That's especially true with strawberry. The commercial extracts have way more flavor than homemade tinctures.

Hey Trent, I'm thinking of making a braggot (mead/beer combo). There's a surprising lack of info on what style of beer to use. Many of the resources that do exist are just a bit of malt added to mead, or a bit of honey added to beer, but I'd love to see your take on a 50/50 mix. Love the show!

I made an amazing semi-dry apple-raspberry cider by just back sweetening with a 1:1 blend of raspberry and apple juice. My next batch will be co-fermented for comparison. I cold crash my cider 24 hours before back sweetening and kegging so the yeast is still alive but the cold keeps them inactive. Havent had any issues with that.

I haven't used extracts yet, but I've used real fruits and that's my preference. I might use extract one day, but I love me some real fruit.... Thx for the video buddy!

I tried a grapefruit extract from Olive Nation in a homebrew hard seltzer. all I could taste was Goo Gone adhesive remover. I think I'll try to either juice some grapefruit or do a tincture of the peel next time.

Tinctures are great options for extracting flavor. I think that would be a good way to go about grapefruit

In the uk we call this a turbo cider. And try all sorts of other juices with the apple juice.

Fruit additions versus extracts: seeing as I only make classic beer styles, I don't use fruit or fruit extracts, but it's good to know

When adding the sulfite and sorbate, is the cider chilled? Or is it chilled 24 hours after the additions, then fruited?

Thank for the information :) been watching for a while and just bought gear to start brewing. What I wonder is How do you add flavors with fruit and have carbonation if you bottle your Cider. I thought that if you added fruits for flavoring without stabilizing it would start fermentation again. Is there a way to add fruit flavor with fruits if you bottle instead of kegging?

Yeah I would say just put the fruit in your fermenter for a few days and let it ferment out. Then when it’s done refermenting the sugar in the fruit go ahead and bottle as you normally would

Ima try this. A mother pro for the extract is itll taste more like the store bought drinks from the shops and if you like those but want to save money its a good option, mightn't be has healthy but. Also The ginger beer i made didn't turn out as fizzy as I'd like. Its been 6 days in the bottle and its pretty flat. Wondering what I did wrong.

Thanks for sharing! I've been trying to infuse fruit flavors with little success in my ciders and have been considering artificial flavors. Do you have a brand that you'd recommend? Great video all around!

I’ve worked with Olive Nation before and they have good flavor options. But I haven’t done enough with other brands to have a solid opinion. Still experimenting!

They work better together IMO. Just a tiny amount of extract helps round out the flavors.

I know the extract is pretty instantly ready to drink, but how long would you have to wait for the frozen berries to infuse?

I would say 3-5 days should be plenty. They start taking on the color immediately, which is nice!

I think that would be great! Especially if you can find a hop that plays into the Berry character. I love hopped ciders, my hazy cider is one of my all time favs

i have a real question here, maybe Trent does not answer but anyone can... what if you blend the apple juice with REAL other fruit in this case blueberry juice? it is usable? cause i want to make a berry brew, it can be made with 100% real berry juice? in my country fruit is easy to find but store juice is kinda hard...

Without watching the video I think the extract wins because blueberries suck in kombucha and aren’t good at imparting much flavor I recognize as “Blueberry”.
