I used to make a lot of jams and I know many of you have much my videos of canning throughout the years and the homestead. Many of my recipes have been revised now that I have realized the damaging effects of sugar. the unfortunate thing is I still love Jam but when blueberry and raspberries what season comes I need to have a healthy alternative. And if you're honest with yourself you all should have a healthy alternative. It takes 6 cups of sugar to make a batch of jam. Did you know that one can of pop turns off your immunity for 4 hours. we can't afford to be feeding all these sugary Foods. And although we may say we do these things in moderation if there's an alternative why not use it
I've been using monk fruit for many years now and I have found that it Cooks cams and bakes the same way as conventional white sugar and it taste the same. I have switched out recipes for my family and they have not noticed any difference. If you're a diabetic have problems with your weight any other pain issues you know that inflammation and your body is
exacerbated by sugar. monk fruit is 100% safe for diabetics because it doesn't touch your blood sugar level. it is actually zero on the glycemic scale. and if you're trying to be healthy lose weight get off the sugar this is the best best alternative I have found around hands down
the thing I like about my monkswood recipe is I used a lot less sugar. And it's still sweet. So come and follow my new blueberry jam monk fruit canning recipe. You will be very surprised at how well it sets up tastes like jam looks like jam and is actually now healthy for you. Yes healthy for you. Plenty of antioxidants. You can now enjoy your jam without any guilt

I did 6 cups blueberries and 1/2 of raw local honey. Blueberries contain pectin naturally. Boil for 45-50 mins and can.

Thanks for sharing...i remind people that honey is great..but still a sugar and will raise blood sugar and still add pounds...so use sparingly!! I bet yours tastes great!!

@@StarryHilder Honey also (If you do not have an underlying condition) has medical qualities and is a natural antibiotic amongst many other things. I take about 1/4 of a teaspoon of honey if my throat is scratchy.

I haven't personally canned with them, but when I've used them with berries as a thickener (no bake pie), it was delicious 😋.

Chia would be a thickener(much cheaper, too). Also, no heating involved...

@@StarryHilder i make three or four batches at a time,,,,,always add extra pectin, i can buy it by the bag fulls, so depending on what it is,,,just add extra,,,,saves a ton of time, specially when its canning season like it is now,,,,huggers, and love, god bless

@@StarryHilder have you grown the plant ,,,stevia,,,it s two hundred times sweeter than sugar, is all natural ,,,and grows as easy as mint,,,,,dehydrate it up, and you have a super sweet sweetener

Erythritol is the majority ingredient in that brand not monk fruit. Therefore you can substitute that ingredient still like the Lakato which had 4 carbs per teaspoon.

Erthritol is actually healthy and a great substitute for sugar. What makes it so different than the other sugar alcohols is most of it gets absorbed into the bloodstream before it reaches the colon .It circulates in the blood for a while, until it is eventually excreted unchanged in the urine. About 90% of erythritol is excreted this way . This is good for everybody but VERY good for diabetics for it helps with post meal blood pressure, has been shown (like the mogroside in the monkfruit) to be a antioxidant. So oxidative stress is reduced which helps protect out blood vessels... There is alot of benefits from both natural sweeteners. The only issue for some can be blaoting and so me gi upset..but i say all in moderation! And your right only 4 carbs per teas SUMMARY

Simply Starry Sustainable Living With God Yes, I have problems with the sugar alcohols as they mess up my GI system. Wish I could tolerate them. Any other ideas for a non sugar alcohol sweetener?

I use Monkfruit for my everyday sugar. If I can jelly with it does it crystallize afterwards? 💗💗💗

Monk fruit is very expensive and I know people who have had bad reactions to it...be aware. Yes, it's also much sweeter tasting...don't care for it myself.

Hi starry, I am looking for some canning recipes with monk fruit. I want to do a farmer's market booth and have been request to have some diabetic friendly foods. I sent an email to Lakota monk fruit company. They responded saying that monk fruit has higher melting point than sugar and canning may be tricky due to product crystalizing. It's been a few days since you made this jam. Can you share if this has or is happening with your jams? P.s. I live in Eden, Idaho on 15acre ranch you are welcome to visit anytime.

wow never heard of monk fruit sweetener. I really want to make jelly with the American Beauty Berries that we have here on the property. There is nothing else that compares to their taste. Thanks for the inspiration !!!

Found my big pot just like that at a thrift shop for $13.00. Just about hyperventilated when I saw it and couldn't get it in my cart fast enough. Your jam sounds delicious. I use monk fruit and was wondering how it would perform in jams. Thank you for this video.

i do Monk fruit, but it is pricey here on the loony left coast of BC,I pay $11.99 for the same bag - 1.76LB and that is at Costco, other stores have smaller bags close to the same price

Those berries look so delicious and will need to give Monkfruit a try when I can. I found another sweetener called Swerve that is supposed to be a good sugar substitute but not sure if you can use it in canning. Not much of an experimenter when it comes to altering canning recipes but glad to know this one works. Thanks so much and God Bless!

Swerve has two maion naitural ingrediants...Erythritol which is made from fermented glucose and is in monk fruit..and i believe a inulin.. I believe it comes from starchy root vegetables like chicory root, onions garlic. I say experiment with a small batch..I think it would work!!

Hi Starry! Thanks for making this video. We just made some blueberry jam with monkfruit as I am staying away from refined sugars right now. Unfortunately, it crystalized after putting it in the jars and letting it cool. Looked completely dissolved when it was hot so we couldn't tell until we opened a jar and used it the next day. We tried to fix it by reheating it on the stove and adding some acidity (in the form of lemon juice) and warming it for longer, but it still crystalized after it cooled in the jars. We can see the crystals in the jam. We had 3 1/4 cups of fresh blueberries and added 5 1/4 cups of monkfruit along with pectin. The pectin that we used was liquid because we couldn't find the powder. Not sure if that matters? Any idea why this happened? Is there a way we can fix this batch?

Interesting...not sure..i never used liquid pectin and i also dont use so much monk fruit...mine turned aout perfect...maybe next time do the powder and go light on the monkfruit... Can you still use the jam in some way??

@@StarryHilder Yes, we are still using it on toast and it tastes really good in plain yogurt. We will try using the powder pectin next time. How much monkfruit do you usually use?

Is that a cup and 1/2 to each pot? or 1 1/2 + 1/4 c to each pot? or 1 1/2 c total.

@@StarryHilder 1st you said you mixed 1/4 c of monkfruit with 1 packet of sure jell. I got that. Then at 5:28 you said that you added a cup and a half and that's it. So, was that a total of 1 1/2 cups or 1 1/2 cups to each pot. I never used monk fruit so I want to try it now. Thanks for responding.

Is this adaptable for diabetics? I usually use stevia (no calorie, all natural plant sweetener, not store bought stuff like saccharine which leaves a very nasty after taste). If you have never had stevia, it is NOT produced by corporates, its a plant you grow. The leaves on it is sweet enough, that only two leaves will sweeten 20 oz cup of tea and adds NO calories, and doesn't have a funny after taste. You can dry the leaves and put it on cereal you make and tastes JUST LIKE SUGAR. Only its healthy for me. You would be happy Starry--Im getting off all those junk things, and actually starting to go all natural on my diet. Eating stuff like what you have shown me so far is doing an amazing job on my health. Even my husband is noticing that. That says something right there don't it?

WEll Im not that fussy with all the particulars..thats just my style..i may wipe a rim that has jam on it..but i dont go over every rim...thats just me and i havent had many failures over the years

I like my jam very natural..so i only used a cup...depends on how sweet you want it...and yes its ok to use frozen fruit!! Great idea!!

sorry to chime in here (very belatedly too, but I just discovered Starry's channel today since I'm fairly new at making jam/jelly/etc & was looking to substitute monk fruit or other sweeteners for sugar for health reasons: Since monk fruit is said to be sweeter than regular sugar, I've heard that 1/3 - 1/4 a cup of it is the equivalent to an entire cup of sugar... so, if you use an equal amount of monk fruit sugar, you're gonna end up with something ridiculously sweet. So that'd be 1/3 cup MFS to the usual 1 cup of fruit. Bear in mind that I understand that monk fruit sugar-- like most sweeteners-- doesn't cause your jam/jelly to set/thicken the same way as it would if you were using sugar, so it's recommended that you add Pectin. If it's a citrus jelly though (like a marmalade) apparently the citrus peels have enough natural pectin that you may not need to.

Thank you Starry! I have always wanted to try canning, but was afraid that I might end up with food poisoning Thank you for explaining this so clearly and showing us, step by step. I don’t have an oven right now, but maybe I can buy a countertop, smaller oven to sterilize the jars? I love it when you teach in the kitchen💜No sugar....yay! Where did you buy that tool to squash the berries? Also the tool that you used to take the jars out?
