If any other people are blind or have low vision like me, and are stressing about working with hot cans, get heat proof oven mits, they are amazing and I’ve never burned myself handling hot jars.
I've canned cranberry juice with monk fruit. It will crystallize on the bottom, then over time it will dissolve. So don't worry about it if you see it settle at the bottom. I let my cranberry juice set for 6 weeks, so the monk fruit will dissolve by then.
Use less monkfruit. I've read in other comments on other videos of hers that it's the higher amount of erythritol in it that's causing this. I'm going to attempt to use the liquid sweetener from Lakanto, since there are no fillers in it, like erythritol, and I'll let y'all know how it works.
That monk fruit also contains erythrotol. That’s what is crystallized. When it’s just room temperature in storage, it usually doesn’t crystallize. But as soon as you put it in the fridge it will. If you pull it out of the fridge for a while and stir it, the crystals break down some.
