While you are doing the final degreasing and wipe-down I would suggest using heavy rubber kitchen gloves (acid/caustic resistant gloves). They are thick enough to provide mechanical protection against cuts from the sheet matal like leather/cloth, but can't absorb oils and re-contaminate the surface as you're cleaning it. Even during the blasting it might be good to have a dedicated pair of more comfortable cloth gloves that you keep in a plastic bag with the painting supplies and are only used when parts are already mostly free of grease/oil.

Love your videos man. You should consider recording your videos in 4K or 8K so we can see the restorations in greater detail.

Nicely done sir! In sections is a good choice to minimize the huge amount of work involved compared to doing it all at once. Sometime I treat my detailing using the same mind-set. Also really enjoying the increased output. Thanks!

After blasting you use TSP in the Wash water (Tri-Sodium-Phosphate) to keep it from flash rusting

You talk about having the chassis dipped in acid to get rid of the rust. How come you didn't do that with this one?

Its probably everything planned but if you cant get a hold of replacement panels maybe look into making panels out of carbon fiber yourself you would never need to do rust repair again and it would make the car lighter, furthermore you can still achieve the original look after painting 🤙🏻

Bro more satisfying than blasting the rust with the media blowing machine, is watching your videos. Just curious bro how long did it take you to blast all the car? Very smart of you vacuuming the media to be used again. Talented and smart.

I have an E30 myself and I see that you have the original supports for accessories in the engine bay. I removed them from my car as I won't be needing them anymore and I found rust beneath them. You may want to look at those places on your chassis.

A huge job, it seems. But a question. How do you paint or preserve all the unreachable spots? Behind some other panels or inside the frame?

I don’t know if this is going to affect the steel once it’s painted, but washing up liquid is full of salt!

would it not be better to phosphate the bare steel by wasing it down with a solution of phosphoric acid and water?

Not very constructive. Unless you've restored a vehicle from the ground up whilst moving countries a few times during a pandemic, with little to no outside help, I don't feel you're qualified to comment
