One way to verify if it's the level is to flip the level over and check it because the high spot or low spot one way will be the opposite the other way if it's the level.

I would be surprised if that level is better than .015" over its full length. Aluminum loves to twist and bow.

How do you feel about the nitrate coating? I’m worried it’s just going to get worn off and then I’ll have a multi color table. Definitely not a fan of the way it has to be bolted only at the bottom course of holes.

So far the coating is holding up could. It does mark up easy when sliding stuff on it. But I don’t think it’s coming off per-say. It’s not the best for grounding through like a nitride coating tho. So when I’m not using the table for fixturing I lay a big aluminum plate on the top to do my welding on. I prefer doing that on any weld bench anyways to minimize arc spots and scratching of my work piece. The aluminum plate has prevented arc spots and my ground clamp is straight to the table as well. I have had it arc spot to the work piece when not using the plate tho. So keep that in mind. Over all super happy with the tables

Why didn’t you get any fixtures for the table. Is that the point of a fixture table system?

The clamps I got with it will do most of the stuff I’ll use it for. Eventually I’ll get some other stuff as it will come in handy for building jigs for parts that I produce. But I don’t make jigs very often. Also I wasn’t sure what I needed yet and didn’t want to waste money on stuff that I won’t end up using.
