I generally like him, but this video is not a good example of his knowledge. He never made ricotta! Real ricotta cheese starts off with whey (which they tossed out). Ricotta is a way to extract more nutrition and value out of the leftovers (whey) from other cheeses.

It feels kinda awkward to me, like Andrew (who has to accept that everyone calls him Babish to avoid being a poor sport) doesn’t know how to deal with brad’s personality which absolutely soaks up all the attention. If you watch It's Alive on Bon Appetit's website there are editing credits and Vinny has also stated that he doesn't do any editing, the post-production supervisor does the editing of the videos.

Almost correct. Matt Hunziker is the editor and Vinny is the creator/camera/post-production supervisor. Matt edits and handles the animations that him and Vinny come up with. Brad Leone is the host of the show.

same, omg. they're both just so pleasant to watch! I found the two of them around the same time, then for days I'd come straight home after work and just binge all of their videos. honestly probably my two favorite people to watch on RU-vid right now. it's so hard to find genuine content on here nowadays and these guys just got somethin' special.

I think you need to re-add milk to the whey from the first batch to make ricotta (ricotta means re-cooked in italian). the cheese you get from the first batch is called 'primo sale' (first salt)
