Hi Pete, actually people here are rather odd about lamb....when I owned the restaurant people loved it but I think people who enjoy lamb are well traveled and have a worldly sensibility...its not like a burger a fries kind of crowd.

That is interesting how lamb has become a meat for those with discerning palates there. I also understand that lamb is rather expensive in Canada and the USA compared to the UK, Australia and NZ. I have found that most meat eaters who try lamb, hogget and mutton for the first time seem to enjoy it though. This is not always so with goat in my experience, and that can be confusing because goat is sold as 'mutton' on the Indian subcontinent. To further confuse issues lamb and hogget are sold generically in the UK as 'lamb', with most of our 'lamb' being actually hogget. Confused? I know I am 😆

Braising lamb shanks is a great way to mellow the gamey taste. Like the winter spices you've added here and of course your liberal use of the wine is my kind of cooking. Dig the sides too: smashed skin-on potatoes is my fave way of making mash and the brussels sprouts are nice too. Great looking plate my friend. Cheers.

So, I subscribed and am working my way through your library. Thanks! This video is so very timely because I just bought a grass-fed lamb from my neighbor last month. I now have lamb shanks and didn't know what to do with them. Yum! Gorgeous Brussels sprouts! Double Yum! I also bought a side of grass-fed beef from her that I'll get next month. You friend doesn't like garlic?? Ummm what? Ok, adding a bottle of wine to a meal has often led me to doing things more than once that I didn't like, but I was young and needed the money. HA! Wow, the lamb looks absolutely gorgeous. I think lamb is underrated, people who don't love the gamey taste (I love it) can try corn finished lamb instead of grass fed! Wow Alexis, that is an incredible spread that you put out there. I love every component in that dinner, including the Lamb shanks! True story: on one of our first dates my husband and I went to dinner at a nice restaurant and the dinner we ordered came with a side of brussels sprouts. When our food came out the brussels sprouts were heavily caramelized, and I thought they were burnt and I was going to send them back. Fortunately the restaurant was very busy, and I got tired of waiting for the waiter to come back and check on us and I decided to go ahead and eat my dinner. I tasted one of the “burnt” Brussel sprouts and it was a revelation. The flavor was incredible, and I mentally apologized for all the terrible things I had been thinking about the cook and the waiter 🤣. That restaurant became our favorite restaurant for date night, and we always ordered a side of brussels sprouts when they were available. That restaurant closed a few years ago, so now I have to fix these at home, and I’ve gotten pretty good at heavily caramelizing Brussel sprouts. It’s our all-time favorite vegetable.

Chef Alexis!!! I eat lamb all the time and slow cooked/braising is my favourite way of cooking it. Always some booze for the cook, I love it!!! Licking the spoon, right on!!! The Lamb shanks came out really Tender and flavoursome. This is a Perfect way to Braise your Lamb with incredible seasonings in there! Miranda life works that way... You think you don't like deer meat, or beer, or wine for that matter, or peanut crusted ribs and then Duffy eats them and asks Tressia for peanut crusted ribs...something you never thought he would ever ever eat....

What time did you say dinner was? Oh yeah 7pm, I'm on my way! ;) I loved every part of this dish! My sister in-law is gluten free and when we make mashed potatoes we use olive oil, and roasted garlic but now I think I will make a quick garlic confit to add to the potatoes! And what? No taste test? ;) My mouth is watering as I type as this looks so delicious. And yeah, lamb. Try it, you'll like it :) Thanks Chef!

So true, strong Fall Vibe everywhere. Searing lamb in the beginning is a good technique adds lots of flavor. It looked so tender. Aromatic garlic oil is a game changer
