Tried it that way. You can tell that it has a slight bitterness but it’s more of a component of the flavour profile than anything else. It isn’t unpleasant at all and overall, tastes amazing. Like a drinkable lime pie.
@maddyocean2369 it's most likely that the acid in the limes is curdling the condensed milk. Brazilian lemonade becomes very bitter after a while regardless of pith because of this.
🇧🇷 folks, some advice from a Brazilian: it shouldn't be bitter at all! The secret is not blending it for too long, just use the pulse function a few times, just enough to extract the flavors, but the peel must NOT be completely crushed in the end. Only a few cuts in the peel is enough, nothing else. This way you can extract the essential oils from the lime peel (or lemon as well) and have the traditional taste of the Brazilian lemonade. You can slice the lemon into 4 parts (and remove the seeds), this will make it easier to extract the juice without crushing the fruit completely and you'll not have a bitter taste after all. Don't blend the entire lime lol! Also, you don't need to use the entire can of condensed milk, just a bit to give it a creamy texture without making it too sweet (you don't even need to use it if you don't want to, actually can just add some sugar and will be great as well and taste a little more citrusy ). This sure does help me. A whole lot actually. I did twice , crushing it in little pieces , with of course a whole can condensed milk ( as I literally took the recipe from a non Brazilian) and it was both times bitter. My thoughts where exactly: 💭 " it's impossible that this mixture should be rhat bitter" 💭. And here you are, finally with the best tip for this delicious 😋 lemonade. I'm about to make mine exactly as you said. Thank you so much for your help. ❤❤❤ Afterwards I'll crush the lemon peels again with water and mix it with some products to use it for cleaning floors for fresh smell. 😊😊😊
The reason most people make it bitter is because they blend it like a smoothie. You are supposed to cut your limes in fours and pulse it a couple times but not too much. don’t forget to add sugar and only half a can of sweetened condensed milk. This is most common recipe amongst Brazilians.

As a Brazilian I fr never heard of anyone putting a f'ing whole can of consensed milk in such a small amount of juice. But it looks absolutely hella delicious
I jumped out of my chair when I heard him tell us to use a whole can. I made it today and used approximately a third of a can while keeping the other measurements the same and it came out extremely delicious, I think a whole can is overkill, wouldn't even dare to try lmao.
Brazilian lemonade is literally my childhood, for every birthday my dad would bring us to Tucanos (I dont know if I spelled that right) because he is obsessed with Brazil, and would have us get Brazilian lemonade every time, and its amazing.
Well I’m trying both ways tomorrow for the first time. I’ll zest it and I’ll do whole limes. I also got some whole fat coconut milk and some honey to sun the condensed milk.

The lime will curdle the condensed milk. Just a heads up if you intend to make a lot and store it in the fridge. Not sure why no one talks about this...
@UndaCuvaChikin: Easy enough to google. Acid can curdle milk. Milk curdles when acids lower its pH levels, causing milk proteins to unwind and clump together. This process is known as protein denaturing. When pH levels drop in milk, it turns acidic and milk protein (casein and others) molecules attract one another to form "curdles" or lumps.
Idk about other ppl but I like the bitterness, when it’s just sweet and sour it’s just not as elaborate. Probably why I like grapefruit so much Bcs I like harmony between sour, sweet, and bitter
Thanks for this. I watched someone make it and I had to toss the whole batch away because it was disgustingly bitter. This seems easier (not having to strain so much), and I’m sure it tastes much better.
I love the slight bitterness with the whole lime (pith and all). The balance between sweet, sour, and bitter + the richness from the milkfat makes such an amazing drink

I have lemons and am making violet syrup so I’m going to make mine a bright fuchsia lemonade. It’s so delicious. I didn’t think violets tasted like much until I soaked them overnight for the sugar syrup. It makes it pop. The color is so bright too!

Lived in the South of Brasil for years and never saw a Persian lime. We had green lemons, but limes were a rarity. I think Americans just saw the green lemons and got confused.

I love brazilian lemonade! And it's supposed to be tart & sweet at the same time. The trick is to cut it in 4 pieces before blending. But I love this guy's recipes and personality. Keep em coming! 😊
