Ingredients
Toppings/Filling:
4 egg yolks
2/3 cup evaporated milk
2 tbsp condensed milk
1/8 tsp salt
2 tsp cornstarch
1 tbsp lemon juice - this is optional - you can also use vanilla essence
1 tbsp butter
Meringue:
4 egg whites
1/4 tsp cream of tartar
4 tbsp castor sugar - you can also use white sugar but I suggest that you grind it (using a blender) to make it superfine
1 tbsp cornstarch
Other ingredients:
Powdered sugar to sprinkle on top (optional)
Vinegar to clean the utensils
Procedure:
Filling/Toppings:
1. In a pan, mix the eggyolks, evaporated and condensed milk, salt, cornstarch, lemon juice. Cook over medium low heat until thick. Once thick, add the butter. Cook until the butter is dissolved. Transfer into a bowl, set aside and let cool.
2. Transfer the filling in a piping bag.
Meringue (watch the video for more tips):
1. In a bowl, combine the sugar and cornstarch.
2. In a separate bowl (mixing bowl) combine egg whites and cream of tartar. Using a stand mixer, beat until foamy.
3. Gradually add the sugar/cornstarch mixture. Add 1 tbsp at a time for every 10 seconds.
4. Continue beating until stiff peaks formed (watch the video to see the consistency).
5. Using a piping bag, fill the cups with the meringue.
6. In a preheated oven, bake for 15 minutes at 170 deg C.
7. Put the filling/toppings.
Procedure (Tagalog):
Filling/Toppings:
1. Sa kawali, paghaluin ang eggyolks, evaporated and condensed milk, salt, cornstarch, lemon juice. Lutuin sa katamtaman hanggang mahinang apoy hanggang kumapal. Pag makapal na, ilagay ang butter. Lutuin hanggang matunaw ang butter. Ilagay sa bowl at palamigin.
2. Ilagay sa piping bag.
Meringue (panoorin ang video para sa mnga tips):
1. Sa bowl, pagsamahin ang sugar and cornstarch.
2. Sa isa pang bowl (mixing bowl) pagsamahin ang egg whites and cream of tartar. Gamit ang mixer, batiin hanggang bumula.
3. Dahan dahang ilagay ang sugar/cornstarch. 1 tbsp kada sampung minuto.
4. Batiin hanggang maging meringue (paanoorin ang video para makita ang itsura).
5. Gamit ang piping bag, lagyan ng meringue ang cups.
6. Sa preheated oven, i-bake sa loob ng 15 minutes sa lakas na 170 deg C.
7. Lagyang ng filling/toppings.

Thank you very much po for sharing this recipe. I tried making these the other day, totoo pong tamang tama ang tamis ng meringue.😊 i tried following other recipes before in youtube claiming na sakto raw ang tamis ng meringue pero natatamisan pa rin ako sa recipes nila.😅 interesting po pala yung recipe ng filling ninyo, it really tasted na parang may cheese.😊 i just added a little amount key lime rind and konting tamis pa. sa newbie po na katulad ko sa baking, malaking tulong po yung tips na binigay nyo. thank you very much po ulit!😊

I tried making this today and it was sooooo good!! I followed almost everything except sa filling, i did not pud lemon extract (i used vanilla) and i also did not add butter but it still turned out yummy!! Tama ka talaga sir medyo lasang cheezy custard, hindi nakakaumay. The best brazo de mercedes recipe i've tried so far. Thank you so much!!

Hello Kakokok! Mas masarap po pag may butter pero you can omit po if you want. Hindi dn naman po masyadong noticeable. About lemon juice or vanilla, you can use either parehong masarap pero I prefer lemon para hindi nakakaumay at may balance ang lasa. Thank you.

If this is ur first time to do it, I suggest follow exact measurements muna..then pag succesful tsaka mo doblehin ang batch to make 20 to 22 cups. :)

Na edit ko na po, mali po ako ng pagkasabi molder- tray po pala. Nakikinuod kasi ako panu gumawa ng brazo's in a cup most na napansin ko lagi nklagay sa tray po.

Pwedeng gumamit ng powdered sugar sa meringue . Dko lang sure ang sukat sa recipe. You may try substituting it by the same weight as castor sugar.

Hello Kakokok Anna! Electric oven dn po gamit ko pero upper heat lang po siya. Try nyo po pag magpreheat po kau mag up and down ka tapos pag isasalang mo na, mag up heat kn lng tapos lower rack. Thanks.

Hello Anna! I used cornstarch po to absorb the excess moisture from the meringue. With cake flour po, hindi po ganun ang mangyayari. I suggest stick to cornstarch po . Thank you.

Hello Joi! Good day! For personal consumption, yes you can use vinegar. It will serve the purpose. Pero if pang gift or benta, use cream of tartar. Iniiwasan kasi natin ang moisture para mas okay ang result ng meringue. Liquid kasi ang vinegar kaya added moisture sya. Thank you.

Dapat po salang agad sa oven eh. Kaya hindi okay n maramihan lalo n pag mainit ang panahon. Aralin nyo po muna isahang timpla para mamaster nyo.

Hello po kakokok! I suggest po mag costing po kayo. Kung mabusisi po sa inyo ang costing, yung iba ginagawa nila usually times 3 po ng lahat ng gastos, yun po ang bentahan. Pwede pa po mas mataas depende po sa packaging nyo. Sana po nakatulong.

Wag nyo na po issuggest ung VANILLA. same measurement kc gnamit ko sa lemon juice since option un pag walang lemon. Ang pait ng lasa. Bumagsak din yung merigue khit finollow ko nmn lhat ng steps.

Yung sakin po 1 day lang kasi nauubos agad everytime na gumagawa ako. Hehe. Lagay nyo po sa airtight container then refrigerate. it will be good for 3 days. :)

Good morning. Same po lahat ng ingredients n gamit nyo? Yung txture po ng meringue nakuha nyo po yung sa tulad sa video? If yes, napreheat nyo po ang oven? Baka po kulang sa baking time? Hindi po kc pare pareho ang oven. Wag po muna dn ninyong ilabas agad agad sa oven after baking. Malaking factor dn po ang cups, baka po okay naman tlg sya feeling nyo po matubig kasi malambot po? Iba dn kc ang hold ng meringue pag matigas dn ang cups. Thank you po.

Hello Kakokok! Yes po malaking factor dn po ang oven. Kung upper and lower heat po ang oven nyo, try nyo po lagay sa middle rack. Laruin nyo po, iba iba po kc tlg ang oven natin. Salamat po.

Bakit po yung meringue nung akin sticky po pag hinawakan. Luto na po sya pero ang sticky nya tas texture nya parang icing na niluto po hindi po sya foamy 😩 Yung unang gawa ko ok naman po pero nung gumawa na ko para sa client, palpak na po 😥

May tendency po tlg magtubig yung hindi pa nakasalang lalo na po pag mainit yung lugar. Try nyo po na yung ibibake nyo yun po muna lagay nyo sa piping bag then bake agad. Tapos while baking yung 1st batch, mix nyo lang ng mabilisan yung natirang meringue then lagay sa piping bag then pipe. Importante po kasi na mabake agad para maiwasan mag tubig. Another thing is gumamit po kau ng caster sugar para sure na tunaw sya sa meringue. Iwasan din po ang overmixing. Thank you.

hi! may i ask po kung bakit po kaya tumigas yung merengue after ilagay po sa oven. 4 times ko na pong tinry at puro fail.. Yung sa temperature po, since hindi numbers, medium low heat po ang ginamit ko. Wala din po akong ginamit na cupcake tray. Isa po kaya yun sa dahilam kung bakit natuyo yung merengue? sana po matulungan nyo ako. Thankyou!

Hello Micaella! Good day! Sorry to hear that po. So naging parang meringue cookies ang texture nya? Since walang pong temp control ang oven nyo like numbers or digits, possible n sobrang init at naoverbake sya kaya sya nag dry. Ganun po kc ang ginagawa sa meringie cookies pinapatagal sa oven para magdry sya totally. Try nyo pong bawasan ang baking time or hinaan nyo pa po ang temp. Sana maging okay na after that. Hello Kakokok! Nilagay po sa fridge? If yes, lagay nyo po sa close n lalagyan. Parang cake dn po kasi yan, magmomoist po pag nilagay sa ref then biglang nilabas.

Malaking factor dn po kasi ang humidity. Kaya usually pag bibili k ng cake nasa may parang fridge sila pero yung parang temp lang ng aircon room. Tapos ilalagay agad s box. In effect, hindi masyadong affected ng humidity yung cake. Sasaluhin n box.
