In my Nan:s cookbook from 1935, it states that you should soak the stale bread for half an hour in cold water. squeeze it, and then mix with sugar,fruit etc all the ingredients that you used Keef. Nan was in service as a cook in one of those posh houses, and was a wonderful cook. My mum used the recipe too, and was quite famous in our area of London, with people shouting over the wall, "Has Eth made any bread pudding?" Thanks for reminding me. Love!
@@xtina0121 It's good to try variations of recipe. My mum changed my nan's recipe by doubling the fruit then reducing the sugar. It was delicious. The funny thing was that mum couldn't stand dried fruit in cakes or puddings so she never tasted her own bread pudding, this was a shame because it was well known and liked in our area of Notting Hill. I hope you enjoy trying Keef's recipe very much.
This was my dad's favourite dessert made regularly in our house in days gone by in one of those white enamel pie dishes with the blue rim. One of the reasons I love this channel is it brings back so many recipes from childhood I'd forgotten about and inspires me to revisit them my self. I'll be trying out this again when the weather gets cooler.
Liam Mack,I grew up the same way. On Sundays we all met at my Grandma's to have Sunday diner with the cousins. I wish those times could come back around. I really miss the slow days.
My Mum loved Nelson square cakes with a cup of tea I remember the white boxes tied up with string and getting excited to see what was in there for me maybe a custard slice, meringue or custard tart 👍🏼🥰😘

That looks lovely, I will definitely be making it. I think that's the nicest recipe I've seen for it. I don't like bread and butter pudding at all but I'm sure I will like that. I'm going to cook mine in the air fryer, I will adjust the temperature and time, rather than use the big oven, I haven't used the oven for months since I got my air fryer. This is the first time I've seen your channel and enjoyed it.
That looks outstanding! I make a variation on that but have never tried with the mixed fruit, peel and spice. What wouldn't give to be sat down with a bowl of that and a cuppa tea right now....
Tip I had from my daughter, have the sugar and swap in a large or 2 medium apples, that works well. I have used some of my failed sourdough loaves for this, in that case you can get an extra twist on the flavour by stirring in a good dollop of starter and leaving it all soaking overnight.
When I were a lad, we used to eat it cold like a cake. Not sure I ever have had it with custard or cream, I imagine it would be a bit like christmas pudding!
I was thinking that too Ian, but the recipe stems from no waste in homes and bakeries especially after the war the brits and Irish folk went through so they used stale buns cakes and breads to make another wonderful sweet treat.
@@brendarigdonsbrensden.8350 Yeah my dad used to do that. I think it stems from the days when the bakers didnt put preservative in the bread so there was alot of stale bread about. I think the bakers used to make it from yesterday bread and sell it as a cake.
I still take it cold as trail food when I am hiking. Keep it cut up in the freezer, take out before I set off and 2 hours or so later it is just right.
I have multiple bags of odds and ends breads in my freezer waiting to get turned into bread pudding. In my family we make ours with dark chocolate and whipped cream on top.
Keefies Bread & Butter Pudding is fabulous!!. Im looking forward to trying this one. I do believe all parts of the world that have breads *leavened or not, have bread pudding type recipes? As yet, havent discovered any that werent delicious. Custard side, is British-whats not to love, regardless of its pud-origin? Thank you for another lovely video & recipe.Nom nom. .btw-the gorgeous & lovely Kitchen Aid works wonderfully for bread puddings, I use the dough hook- I'd venture a guess, if you try it, you'll never go back to any other way. (I use the kitchen aid for every, every, every thing!).
OMG. So delicious. I dare not make it cos I know I shall eat the lot! To take it up another notch, add the juice of that lemon to the mixture. You don't need custard. Just a lovely cup of tea!

My mother used to make bread pudding which was always served up at room temperature. If there were leftovers they were sometimes pan fried with butter.
Hi. What temperature and how long tobake it in a halogen air fryer oven? (I dont like the applicance at all but have no space in my kitchen for an oven so have to put up with the stupid thing. ). TIA
I've never used a halogen oven but it looks like it's similar to an airfryer and that is basically the same as a fan (convection) oven. So reduce the normal oven temperature by 20° Celsius and cook for the same amount of time. In this case that would be 160° C (360° F) for 90 minutes - but I would check it maybe 20 minutes before the end. Good luck!
