I was sipping a beer quietly in the kitchen of Pepe in Grani when pizzamaker Franco Pepe called me over. He wanted to 'show' me something. A new pizza that he had been working on for about a month. A pizza that brought back memories for him - and me as well. The pizza dough is placed in the oven (without oil) after having been topped with a creamy grana padano cheese -aged 12 months - and pancetta made from caserta black pork. Then Pepe cracked an egg on top, placed it back in the oven for a quick bit, then sprinkled pepper on top. Ecco - Breakfast!
