Breville Bakery Chef Stand Mixer Review. Updated Model - Scraper Mixer Pro. We are doing a test and review of the Breville Bakery Chef. This is an updated model of the original Breville Scraper Mixer Pro Stand Mixer. This mixer is also known as the Sage stand mixer. This version has a 550 watt motor and comes with a 5 quart glass bowl, a 4 quart stainless steel bowl, a regular flat paddle, a scraper beater, a whisk, and dough hook. We are testing the whisk by making whipped cream, the paddle by making Peanut Butter Cookies, and the dough hook by making bread.

The light is a great idea to me. The only thing I don't like is the air exhaust in the front, other than that it looks really beautiful, and for an average household I believe is quite perfect. The only think I dislike about the scraper paddle is that is very small compared to the metal one, so if you have a higher amount of mix a lot of it is gonna stay above the beater on the bowl, but under it is very clear or does a great job cleaning the bowl and that creaming is perfect, very nice mixing action.
@AussieAngeS

That mixer looks pretty awesome to me, it’s got a lot of speed and power behind it.
@EricLearnstoCook
@EricLearnstoCook 4 года назад
Hey Angie. Hope all is well with you. Breville has discontinued selling here. Too bad. I think on higher speeds it has decent power. Lower speeds could be questionable. The biggest problem is how the bread dough slips when kneading. I'd like to do another test with two recipes to see if 6 cups of flour makes a bigger ball, and if it does better. Kinda like the Ankarsrum and Bosch have their peculiarities, maybe this guy does too?

@jachan969
@jachan969 3 года назад
I think for the Dow making you got to run machine at wee bit higher speed. With the speed it will throw the Dow around a bit. Unlike other mixers this one the Boss got a constant torque drive which mean it has the same power even at lower speeds.

Hi, I just came looking for information about this Breville mixer and it appears that you are quite familiar with it. Can you tell me if there is any way to adjust the height of the beater? Mine comes nowhere near getting all of the ingredients at the bottom of the bowl. I have not tried the scraping beater because the cookie dough I make most often is very stiff.
@russ5024

Kneading is being accomplished as long as contact or the dough between the hook and the bowl.

So is the 3qt metal bowl like Kitchenaid's combi 3qt bowl? The cord wrap is cool but I wonder how long it would last? I had a blow dryer with the same tech and after a month of use, it no longer recoiled. And the light is a cool feature! The whip seems too large for the 3qt bowl...to me it should be smaller.

Any mixer does that with the dough when the dough is too wet. If you scraped the dough from the hook and added maybe a tbsp of flour, your dough likely would have kneaded just fine! Thanks for the review!

I kind of wish I had purchased a tilt head mixer instead of a bowl lift. It's a bit of a pain to drop the bowl every time I need to scrape. Enjoy the bread and cookies!!!
@EricLearnstoCook
@EricLearnstoCook 4 года назад
Patricia....but you don't have to see the head wobble when kneading anything....If a certain KA model, you don't have to see your paint chip every time you tilt the head. If you have the room for bowl lift, I'd certainly appreciate it more than any bowl lift. Some tilt heads just aren't all that smooth with the lock and release system. Can you get a scraper beater for it?
@gottagift
@gottagift 7 месяцев назад
I From what i have seen on your show, i do not like the Breville due to the head hopping about. The first time i seen you demonstrate a Breville it also made some awful grinding noise from the gear. That was when you mixed up something called Snickerdoodle. In all fairness though, while you where kneading the bread dough you were doing so here at FOLDING speed, one speed above kneading speed. That one extra notch may well have been enough to not allow the dough to grab onto the bowl as intended. I love the double bladed paddle and i am happy to say that KitchenAid offers the double bladed paddle as well. There is one thing i am curious about, are the Breville/KitchenAid paddles interchangeable?

@anelya561

Which one did you choose?
@agcons
@agcons 4 года назад
it will be available in Canada shortly, and it's priced roughly in Kenwood Chef territory, so higher than Cuisinart, the KitchenAid Artisan, and the Bosch Compact. It didn't sound the least bit strained with one loaf, so I think you could double this recipe without trouble. Give it a try.
@EricLearnstoCook
@EricLearnstoCook 4 года назад
I'd like to see if a bigger dough ball would work better. We just like how KA's can make one, two or triple (depending on model) with no issues (Pro, not Artisan). Glass is too slippery to knead dough in.
@agcons
@agcons 4 года назад
@@EricLearnstoCook Had I not seen it in your video I would never have thought of the difference between glass and metal, but it makes sense now. I made bread by hand for 30 years before buying a 7-quart Cuisinart in 2009 (so, the old style that was probably made by Kenwood). I've used it nearly every Sunday to make two loaves of bread since then with no issues; it barely gets warm. I did try four loaves once and it got quite a bit warmer but did not overheat. However, I decided that four loaves was not something I should do to the machine too often. I've never tried one loaf but I suspect I'd have the same spinning problem: it sometimes happens with two loaves if the dough is a bit too wet. A tablespoon or two of flour always sorts that out. That said, having watched a number of videos, yours and others, I'm becoming convinced that the C-shape dough hook is a major contributor to the spinning problem in several machines, especially with smaller batches.

Somehow I really want this. It is quite expensive around here, but you know what, this type of mixers really expensive around here. I think I want it because of the silicone beater and the 2 bowls included. (I think I would never use the hub, so I don't miss it.) Still costs way less than the KitchenAid. Still, because Sage (we have Sage here not Breville but the same) don't have an office here, they never discount it. :/ But, where I live we have 220 so at least that's a bonus. But I am thinking about rather buying an expensive food processor (Sage) because if I really want I can make basic pizza dough in it, and a bread machine. I rarely make sweets, but using my food processor almost daily for prep, so in the end, I have a big and expensive machine that I maybe use yearly, because it can't make a better bread loaf than my hand mixer. 🤷‍♂ I think I rather buy a bread machine and a food processor. Funny that I like making sweets but I don't have a sweet tooth. 😄

Hi Amy, I would love to know which one would you recommend, this upgraded Breville mixer or the new KA artisan 185 which is without the spiral for attachment? I receieved my KA yesterday and am wondering whether it will be worth of it to change it up for this one coz besides lack of a spiral, the KA also is weirdly heavy at the top and makes weird noises at lower speeds. I live in Europe so I can still buy this one, please let me know if its worth of it :)
@LouRao
@LouRao 3 года назад
I would 100% recommend the Breville over KitchenAid Artisan, or any of the KitchenAid Mixers. The quality KitchenAid products is not what it once was. Both the KitchenAid and Breville handles most of the mixing task, but the Breville has better features, solid made, and less returns from owners. There are far more returns from the KitchenAid due to product failures. The draw back of the Breville is limited attachments. If you can live without the extra attachments and accessories KitchenAid has to offer, the Breville is worth purchasing. Note, I’m not unfavorable to the KitchenAid or bias in anyway, the products they produced is poorly made and quality control isn’t there. Getting an older KitchenAid second hand models is my recommendation, better made vs the new products made today. Amy, another well job done on your video, as always! -Lou

Very tough to answer. The Ank is good, Bosch is good (although it takes longer, it eventually kneads and will likely last 40 years), Cooking Chef seems good. Hobard seems good. KA Pro 6 does well (but if you use it everyday, it may eventually burn up). We use our bread machine a lot. Scrappy Doo, the Farberware was cheap and did good. Lots of choices. But there's a lot of $200-$300 mixers that do an 'ok' but not great job.

Comment-scraper blade looks like the patented www.newmetrodesign.com Beater Blades, the KA-TH, for my KSM90 Ultra Power Tilt Head Kitchen Aid, which came out before the Kitchen Aid. The key to operating it is to be able to adjust the height screw for smooth operation. Like the older tilt head, the Breville appears to have the spring loaded washer against blade. Does it have a height adjustment? Since having the "Beater Blade", I never again used the original blade. And I have a second one.
