Breville Infuser 4 Years Later, and Counting... Let's Make a Latte

Bara AlMakadma’s streps to making a home latte. Using Breville infuser, a coffee scale and the Sette 30 Grinder (but you can use your own equipment):
Step 1:
Make sure all your ingredients are within hand-reach.
Your wipes/cloths for cleaning.
Start with a clean counter and finish with a clean counter.
Step 2:
Set your desired dose and add 0.1mg
dose: 18 mg
Therefore: measure: 18.1 mg
Place beans in the hopper
Step 3:
Rinse (to both heat and to clean the porta-filter)
Wipe the porta filter and the showerhead
Step 4:
Make sure your tamper is also clean from previous tamped coffee residues
Step 5:
Grind. Equal distribution. Correct size.
and make sure your beans are not contaminated with other beans ;)
Step 6:
Distribute the heap of coffee evenly - the end goal is to prevent channeling and to have an equally pressurized puck!
Step 7:
Tamp!
Step 8: lock in the porta-filter to the showerhead.
Just securely lock it. do not tighten it too much
Step 9:
place your scale, and pre-heated cup on the scale.
Do not forget to tare your scale and have your timer ready.
Step 10:
Start your shot, at the same time start your timer
watch the pressure go up a little for pre-infusion, and well into espresso range for the rest of the shot.
for 35 mL +/- 1 mL
for 28 seconds +/- 3 sec
Step 11: turn on the steaming wand.
This is a single boiler machine. and you need to wait for the temperature to go up to steaming temperature.
When the steaming light is steady: quickly turn of; place pitcher and turn back on while wand is in the milk pitcher
Step 12:
place the want at an angle off center and directed to the pitcher wall, about a cm deep in the cold milk. raise it out of the milk slowly until you hear a hissing sound. Keep there until room temperature. Then keep it under the surface with milk swirling to desired temperature
Step 13:
Make sure you shut off the wand for a couple of seconds before pulling your milk pitcher away. To prevent splashes ;)
IMMEDIATELY: clean with a wet towel
Step 14:
Swirl, and give a gentle tap to make sure the milk looks like wet white paint with no bubbles. just SILKY smooth!
Step 15:
Now pour your milk onto your shot! Compose your latte!
Step 16:
Always empty your drip tray - to keep your machine clean and always smelling, looking, and feeling fresh. Stale water is not a good idea
Step 17:
Knock out your puck BEFORE leaving your station. and rinse and clean your porta-filter and wipe your showerhead.
that way: every shot will taste great.
Finally enjoy your coffee with your loved ones!

Notice that only because my grinder is a zero-retention grinder I do not weight the porta filter before and after dosing. Otherwise I would. Here I simply weight my beans. What goes in usually goes out within 0.05 grams

What do you do with rest of milk? Can you pour less once you know exactly how much you need, or is there a minimum

Generally I know exactly how much I need. If any is left I drink it with biscuit!

Amazon has plenty of cheap and good coffee scales. Make sure it is a “coffee scale@ though

My grinder is commercial how do I put do not do it has numbers like 1 to 10 what’s the best number should I use ?

Trial and error: grind small but not too fine so that u can pull a double shot with consistent streams over 30 seconds +/- and aim for 15 to 19 bars (that is my personal method). The numbers are arbitrary and differ from one grinder to the other.
