Great advice Alice! When I drink tea solo, I usually use a small amount (in a tea thermos) and let it steep for longer. I can get two infusions from this (not including the wash).

I know black teas are usually brewed at 212F, but if I adjusted the ratio with more leaves and less water, what would be a good infusion temperature to start testing at? I have a black tea with fruity notes that aren't as noticeable as I would like and I was wondering if this would bring them out more.

We typically consider 212F too hot for most black teas, particularly if you wish to highlight sweetness and more delicate aromatic tasting notes (ie. floral, fruity, etc). The compounds responsible for these flavors tend to be more volatile, so using higher temperature water will cause them to evaporate out of the tea, resulting in a flatter and less fruity taste. We recommend brewing most black teas closer to 180F for a smoother texture and more balanced and complex flavor.

Teachter . I taste that any black tea drinking from ixing pot is not as tasty as brewing from gaiywan . I am kinda dissaoointed of drinking from even an expensive claypot. Whats your opinion and advice. Thanks.

Yixing Clay is not ideal for all tea styles, since it will often steal aroma from lighter or more aromatic tea styles. We typically recommend using Yixing clay for darker/bolder styles like Wuyi Oolong and Pu-erh. Yixing clay is not a flavor neutral material, meaning that it will change the taste of your tea. In general, it will slightly reduce aroma while increasing texture and finish.
