It's not a load of rubbish. It's just not a true reflection of the water chemistry at your home tap. You would need to analyse the water in your mash tun to get an accurate depiction of what minerals etc are present and as what concentrations. Water authority reports are typical analyses for your general area. This can vary from day to day (in fact from hour to hour)
Great question! It was an intermittent flake every now and then that was so infrequent that when we tested in-stream, it didn't show up. An unlucky circumstance that prevented us from solving the problem sooner.
