just now bout to smoke something after few yrs of having this grill, was going to do this mod but I found out that the knob settings are very off, something is wrong with regulator, I have to put mine barely off the off settings, but can only get it to around 230 from front gauge sais, is it worth doing the stack mod? what temp probe do you recommend getting that your using? going to smoke a pork loin with mesquite chips.
you will lose some temporary with a water pan and the meat in the smoker. I added a needle valve so I can do fish and sausage. I recommend using apple wood and maverick temp probe. I've got a lot of use out of mine and never let me down! Good luck.
