The cornbread is for 'sopping' juice... We would soak up the cabbage juice or the gumbo or the beans. But our favorite is with any type of greens, turnips or mustard or collard greens. The juice is called pot liquor and it is delicious soaked up by the cornbread!

This is so good to see. I drive Uber in Austin and it was only like a month ago I was talking with a passenger about fried chicken. I had recommended Mattie's here as some of the best I've ever had. I mentioned the best I have had was in the late 80s, at Willie Mae's. They were literally locking the door at closing when we showed up but welcomed us right in. They were so hospitable! Then, the chicken. Fantastic! Anyways, he told me that it had burned. So it is great to see them open for business! It made an impression I still carry more than 30 years later.

My understanding is that the usual fast food fried chicken places (KFC, Popeyes, Church's, etc.) use a pressure fryer. That in an of itself results in excellent moisture retention. But that should be consistent around the world. The hard part is keeping the meat moist (especially white meat that dries out easily) when pan frying, which takes longer and typically produces a crispier fried batter.

the thing is American chickens are low quality from being raised so poorly and inhumanely as well as being fed garbage and hormones, so imagine if Willie Mae's actually used quality chickens...
@ypw510
@ypw510 5 месяцев назад
@@OlJackBurton Depends on the source. There are a lot of farms that still raise heritage breed chickens. Even some in the US that raise traditional Asian breeds like "yellow hair". I've bought those before at the suggestion of Asian friends, and those are typically smaller and have smaller legs and small amounts of breast meat, but a richer chicken flavor that well suited for making chicken soup. But no - growth hormones can't be used in American poultry. Antibiotics can be used to promote growth, but must be stopped well before slaughter and undetectable in tests at the time of slaughter, and the USDA inspects all poultry facilities. They're big because of the breeding of white broiler chickens that grow faster on less feed with large body parts - especially the legs. How humanely chicken are raised varies. Some farms still raise white broilers in more humane conditions, while some might raise heritage breeds in large facilities. I've bought chickens from a local facility where they clearly had live chickens in house and were slaughtering them in the back room. I do remember going to this place once where they said their slaughtering equipment wasn't working, but we could buy a live one and take it home if we knew how to slit its throat and let it bleed out and remove the feathers.

It's so humble and unpretentious, but so, SO good. Even the sides like the green beans or peas, they look plain but they just knock your socks off. There's a reason the locals got together to restore the place after Katrina wiped it out.

I don't know about that. I've seen comments saying it was unfair that they didn't just give their crew their own separate orders. In any case, they've addressed this before - that they try to do what they can to reduce food waste. I've seen criticisms from others that they're somehow wasting food, when people didn't know that they were sharing what they didn't consume on camera with the crew. But this only shows that you can't please everyone and there will be critics regardless of what they do.

@LindaC616 5 месяцев назад
@bladepanthera so this place is about 40 min from me, and when I've tried to go there before, they were closed. Yamyang--I'm not usually a fan of sweet sauces on meat, and this hasn't won me over. Their pieces were hacked up (lots of bone, little meat) or wings, and the honey made it so sticky. I think I'd rather just have the fried chicken. My friend's pork bulgogi was good, as was her fish "corn dog". We both enjoyed the jeon. Deokbokki was good, the sauce has a kick that sneaks up on you. I can see why the consistency might be a thing for some people. Verdict: I'll go back there again, but might try other dishes, would only repeat the jeon or the bulgogi. The "potato salad" side was interesting....more like cold mashed potatoes with pieces of veggie in it, less creamy-mayo than American potato salad. Liked it more than I thought I would, would probably love that salad in summer!
