Kent, you saved me about $71.00. I got hit with the urge to buy a SNS. Then a member in a Facebook group referred me to your Bro N Sear. Ingenuity at its finest. Took me like 20 minutes to build. I watched Ryan's comparison video and that's what sold me your idea.
@@daddydutchbbq it works amazing! People sometimes underestimate the baskets. I use mine as a Bro N Sear, plus have 2 more that I use in place of an expensive Vortex.

Nice, I don't' have baskets and just used 2 bricks. Just started in to kettle cooking with a well used 22". Still figuring out what I want or need. Baskets may be something on he list now.

Just made one, love it, I don't understand why weber keeps insisting on the double baskets, they really should just build one large one. Honestly my baskets were sitting idle till I saw this.

These baskets came with my new Weber Master Touch and after my first attempt at indirect cooking, I was not happy with their function as separate units. I had done research on the SnS and was about to buy one until I stumbled across this video. I used the baskets that came with my grill, made the same modifications (with a few detail differences, fasteners mostly) and the result was superb! Mad props to Daddy Dutch! Thank you!!
That’s really great! I think it would be great with a rotisserie as the coals should be to one side. I don’t think this is the poor man’s slow and sear, I think it’s the smart man’s ! Klaus
I have had those tossed to the side for years because they seemed not very helpful. Been using 2 bricks the last few years. But this idea was too good to pass up . 5 minutes & problem was solved . Thanks for sharing. My old ones finally get used !!!!

Keeping the hot coals off of the kettle wall helps keep the heat in the kettle. The water pan helps block the radiant heat of the hot coals. Great easy mod! Right on Kent!
from the uk and really wanted to attempt smoking a brisket. every video ive seen has used the SnS but didnt really fancy paying so much for the slow n sear. u sir are a hero
I'm going to build this contraption. I was just piling the coals up to the side and letting he water pan hold them on place. This is a much better solution.

I've tried to achieve the same by just having the baskets next to each other but this seems way better in terms of surface area and capacity. Thanks for this tip, I'll remember you when my brisket project comes to fruition!

I typically just use firebricks to bank my coals to one side, and place foil on the exposed charcoal grate on the opposite side. Im going to make these and also use the firebricks against this to really dial in my Kettle smoking set up.
This could be made easily with adjustability in mind. Using wing nuts and multiple holes along the back. Then slide the front closer and close up the back to create a smaller charcoal spot.
What a great idea!!! Thanks a lot brother! Commented a couple days ago and came back to check it out again! Also, for that extra open space, I saw another video where he adds an extra 18 inch charcoal grate and sits it on top of the existing charcoal grate and turns it 90 degrees to make small squares and limits the charcoal falling through thus forcing the charcoal to burn even longer(hope that makes sense to everyone) will be trying it soon! Thanks for the feed back and for stopping by. I now have a piece of expanded metal in the bottom of the bro and sear. I also have a plate cut to cover the other part of the charcoal grate to force the air through the basket. Let me know how you like it!

The slow and sear costs almost as much as my Jumbo Joe. Screw that. I usually create my hot zone just by filling the side without my weber basket with hot coals and using the flat edge of the basket as a barrier. Works great. I might just try making this though, nice work, thumbs up!

@@daddydutchbbq It all came together in about 10 minutes. I will test it out this weekend with some ribs. Definitely like how it fits in there! I watched the other video where you showed your deflector plate. I will have to keep my eye out for a chunk of steel that'll work for me!
It’s great. I built the deluxe version by cutting & putting and old grill at the bottom. It’s not just the poor mans version but coming in at a fraction of the cost it’s also the wise mans version 👍
This is the coolest mod gotta give it to you the slow an sear is no better than your mod an the drip/water pan hold more water than the slow and sear thank you for sharing this idea

Not only can you put some in a drip pan under the meat, but another approach is to put some in a small loaf pan or mixing bowl directly over the lit charcoal. Really helps to moderate the temps and provide steam in the kettle without totally blocking meat from heat under the grate like the SnS does. (Who only wants to cook the top side of their briskets and pork butts?)
great mod! altered my Weber basket and it works great! thanks for sharing, only if the grade charcoal catch on the bottom was extended. I used aluminum to use as a make shift design, works great

One benefit of the SNS is how it evens out the temperature across the cooking grate. I'd be curious how this setup compares. It certainly works better than the two baskets did.
Hey Ryan, just an inexpensive option because i thought the 2 baskets were clunky and didn't match up well together on the same side. Not a true replacement for the S n S but a very workable option. Dude you're a stud. I just got my Weber Summit Charcoal Grill (24") and they no longer make a low profile Slow N Sear for it. This hack just might work!!!

@@daddydutchbbq I was back in NYC for about two weeks, but now I'm in the country again. It's nice to be able to go outside without a mask here. Doing a lot of grilling. I've got some video ideas in the works, but mostly practicing recipes and techniques. Hoping to cut together a new vid in the next day or two.

You could also use some metal vegetable cans and put in the corners and put the coals around. Just fill with water. Maybe the results would be close to the same

Nice. I wanted a SnS but ended up building a UDS for only a few dollars more, a ton more BBQ real estate over my 22.5 Weber. I'll probably end up fashioning my baskets like you did here but pop rivet it together. Thanks!

Just did this on the 22 Kettle I just picked up used for $50! Will be trying it out this weekend. If the vents let too much heat through the opposite side, I might try a brick or two as to block heat.
@@daddydutchbbq Just finished a 2lb grass fed chuck. 3hrs, 2hrs wrapped in foil, 1hr back on grill. used Oak chunk, lit one end and it burned great at 250 for 3hrs! wrapped it and added a little more chunk. Also added a little honey and some double IPA. Did great for the 2hrs '(250-275). Unwrapped for last hr and it started to taper at about half hr mark, stayed at 200 to finish. Got it resting now and it looks and smells amazing. Making some tacos with it! Pretty impressed at how easy it was to maintain that 250 mark!
