First I want to shout out #MasFarmhouse in NYC (recently shuttered) and #GalenZamarra for teaching me this technique.
It looks fancy, it's super easy to make and iv'e never had anyone not like it. It's always a banger. It's also healthy and quick if you want to do something a little different for a lunch with friends, or a dinner with your partner. I hope you enjoy. Recipe-
1lb fresh tuna (yellowfin, big eye, bluefin, blackfin ect...)
Sauce
1 Tablespoon or 15ml Tamari
1 Tablespoon or 15ml Yuzu juice or 1/2 lime 1/2 orange
1 Tablespoon or 15ml White soy sauce
.5 Tablespoon or 8ml nice Balsamic
2 Medium shallots sliced thin about 1/4 inch
2 cups oil for frying ( I used canola)
4 Tablespoons butter for searing
Microgreens
-Mix all ingredients in sauce together, taste and adjust as needed. Set aside.
-Slice shallots in 1/4 inch slices. Add to pot and cover with cold oil. Heat over medium heat until light brown. Remove and let cool. Season lightly.
-Slice tuna into 1/4 inch arrange in a circular patter or the shape of your plate. Place on something heat resistant like a steel tray. Season with salt and pepper lightly
-Heat butter up until brown (about 4-6 minutes over medium high heat while stirring) slowly dump brown butter over fish, covering entire fish to give it a light sear.
-Scrape excess butter off with spatula. Transfer to plate. Top with sauce, micro greens and crispy shallots. Happy plate. Enjoy!
