Brown Sugar Tapioca Pearls From Scratch / Bubble Milk Tea [珍珠奶茶]

Hey lovelies, i wanna show you today how to make tapioca pearls at home using dark brown sugar and tapioca starch. This time, i used dark brown sugar to make the pearl darker in color. It is so yummy and guilt free since you can control the sugar you are putting in. You are welcome to use any sweetener for your milk tea, in this video i didn't use any since the sugar syrup from pearls is enough for me. I hope you'll give it a try.
Here's what you'll need:
1/4 cup water + 1/2 cup for diluting the tapioca starch
2/3 cup dark brown sugar or muscovado sugar
2 and 1/2 cup tapioca starch
For the milk tea:
2 teabags of English breakfast tea
2 cups boiling water
2 cups cold milk
For the brown sugar syrup:
1/2 cup dark brown sugar
1/4 cup water
then bring to a boil and simmer for 1 minute
Notes
1. I found it fail proof when we dilute the tapioca starch in the water before mixing it altogether. I did this recipe a couple of times. And this by far the total life changer foolproof method.
2. Please note that our dough is hot the moment we took it out from the heat. You can wait for some time before kneading it. But it is important that it should be warm or a little bit hot when we are working with it. Kneading a cold dough will make our pearls crack.
3. Don't worry about the lumps on our dough. It will just disappear the moment we are going to knead it.

I used to cook pearl at work.yo let it cook well.you must cook for around 20-30 minutes.n then let it cold for 20-30 minutes again w/o turning the heat.

I tried it twice. Mine did not come together. It dried up quickly and fell apart to small pieces. 😭

Combine starch and brown-sugar-water in the pan while hot. Near boiling. Mix fast and vigorously. I’m an adult and the mixing can tire me out...so it can be quite a workout especially if you’re a child/teenager. If it remains crumbly, toss it back on the pan, add a bit of water and heat up again. mixing while hot is what combines it.

Hello thanks for your recipe. Can I knead and make the tapioca pearl then freeze the extra one I made? Or can just keep in the fridge then boil the portion I just need? How long will it last?

Hi dear, you can store the uncooked pearls in the freezer for a month or so. Just boil enough portion that you can consume right away. :) Thank you :)

Savor Easy thanks! Is it ok to just put in the chiller or refrigerator (not freezer) if will consume within this week? Also is it normal that the pearl will become hard after few minutes of boiling and mixing with ice and cold milk?

Diluting the tapioca starch before mixing is not something I have seen elsewhere but that worked so good! Do you freeze the excess pearls? This recipe makes such a large amount and I’m generally only making it for myself.

I should have read the comments first, watching the video made me think it's just easy to do. I'm very excited imagining it will come out as beautiful sweet pearls like in the video, But I was wrong, mine dried quickly and didn't form into balls, they flattened and It didn't even float when I tried to cook it.

Just wash it with cold water after straining then soak with sugar syrup for some time. Hope that helps :)

I’m making this now and I’m at the step where I should be kneeding it but it just completely liquid goop. Do you know why this maybe happened and if there’s anything I can do to fix it

HI Tayla, it's important that you have this sticky dough before adding the rest of tapioca starch, without that sticky thingy will not give you a knead-able dough. But you can still fix it though, dip your goopy dough in a boiling water for 10 seconds, take it out then knead it again, add tapioca starch if needed. :) Hope that helps, let me know. happy sippin''

u can probably use regular starch but it wont have the same chewiness ig

Hi dear, after you divide your dough into several pieces, you have to cover the rest of the dough while working on the first one. Cover it with kitchen towel or cling wrap so it will not dry out. Then one more thing, do not let your water and brown sugar mixture boil for a long time. Hope that helps. :)

In other tutorials they dont dissolve the tapioca starch with water and put it in the brown sugar and put tapioca starch again. Can I just boil brown sugar then put tapioca starch like you did in your other tutorial of tapioca pearls? And I have another question,How long can I store the tapioca pearls in the refrigirator?

I stored my pearls in syrup after I made them and next day they were hard and unusable. Should I just make them for immediate use?

Probably just boil some that you can finish eating first then refrigerate the rest. (And yes I am years late, what’re you gonna do about it)

Ying Li if you freeze them they can last months, as long as they are uncooked. You probably shouldn’t freeze it with the syrup because it won’t be syrup anymore lol

Hi dear, the only difference will be in color. You can use any brown sugar available in your place :)

Hi dear, I think you used tapioca flour, that happened to me before. Tapioca starch holds it shaped even when it's cooked.

I ended up getting dark brown sugar and used this recipe instead. I'm really happy with how it turned out! I just wish I able to make the balls more uniform but hey, practice makes perfect!

Hey love, you can still save those failed ingredients. Do one thing, boil water in a pot, just about 1/4 cup. Then place the oobleck mixture in the boiling water for 5 seconds then take it out. Start kneading on the flat surface and add tapioca starch as needed. I hope that will help you :)

Hello! I love ur recipes for the tapioca pearls but i only have one problem, i cant possibly get tapioca starch and i cant get normal starch either, only flour, is there any way i could use flour? I have all the types of flours but no starch of any types.. please help me someone

Hi dear, me too. I have to travel from one emirate to another just to get tapioca starch. I tried cornstarch and flour before but i did not like the result. It's just like eating a flour ball. 😊

If it helps, tapioca flour and starch should be one and the same, they're both of the cassava root. Um, idk where u live but I found my tapioca starch pretty easily at lotte plaza

Thanks Amy, you can store the uncooked pearls in the freezer. Mine I store the unkneaded half portion of the recipe and roll it when i need it. Hope that helps. :)

@@audreyhp4476 hi dear, pls do this. Boil water in a pot, then take half of that hardened dough and submerged it into boiling water for few seconds. Take it out then knead the dough altogether. It will incorporate into a kneadable dough again.😊 Hope this helps.

@@SavorEasy i wonder what I did wrong :( when i added the 1.5 cup tapioca starch into the sugar, it never turned to dough. Just soft goop! Maybe overheat the sugar?
